You can't. But that would be cool. The "New" seems to drop off after a day or two.

We're not referring to the percentage in a book. The word "New" appears to the left of the title on e-ink Kindle home pages (I realized after I posted that I don't have books on my Fire, so I should have written "on all 3 of my Kindles"), and the word disappears after about 24 hours.
