want to record students doing role plays

I am looking for the easiest, most cost-effective way to record my students while they do presentations, role-plays, etc. Have had no luck getting NADY wireless microphones running through a Nady mini-mixer, but I'll bet it's because I am new to this. I am probably messing up some setting(s) somewhere.
