You do not need to close the latch. Better off to use less filling and eat more quesadillas! If you put in too much filling, the machine gets all goo-ed up. Use wetter ingredients, like salsa, afterwards.

I found it easy to clean, but if you try to close it with a fair amount of filling in the quesadilla, the plastic hinge will break! Threw it away.

The hinge is metal cover by Nonstick material.
