I would recommend getting a hydrometer to read the specific gravity, but not required. this is one of the agents used stop/inhibit fermentation. used a few days before bottling

your air lock allows gas (and fluids ) to escape. while keeping the outside environment out. nothing should back-flow into fermentor (but this is why they recommend filling airlock with sanitizing solution. read up on "blow off" tube and vigorous fementation. you should be ok.....you can replace/refill airlock.

The juice is shelf stable and is able to be shipped and stored just like any other fruit juice on the store shelf that does not require refrigeration.
