Maybe small to medium pans work well, but I have a 12 inch pan I use a lot and I have had no problems using it, might take a little longer to heat the entire pan but it works well. Temp range is about 460 at high on one burner, but lower if you use two burners. When you elevate one burner, the burner goes down in temp.

1800 watts at 120v is about 15 amps. A 20 amp dedicated circuit should be fine. If you have other stuff on the circuit, you're likely to have problems.

The owner's manual says maximum weight is 25 pounds. A gallon of water ways 8.345 pounds. 2 gallons of water would be 16.7 pounds. Your large pot with lid probably weighs about 3 pounds. My pressure cooker with lid weighs 6 pounds. You are good to go.
