It's near impossible to find Coconut Manna around here so I was thrilled to find it on Amazon and at a very reasonable price. Received my order in good condition however, the coconut oil and ground coconut meat had completely separated and re-hardened at some point. I had no idea what a challenge it would be to stir this treat back to its original consistency (and yes, I hot water bathed it first). The oil melted completely but the coconut meat would NOT budge. If I could have separated the coconut meat portion of the jar, FROM the jar, I'd have tossed it all into my Vitamix and called it a day but it was not happening. I eventually took a steak knife to it and sawed my way through it, bit by bit, and once I got it into smaller pieces it finally started to break down on its own to the point where I could stir it up. Messy and exhausting! I haven't even bothered with the second jar since I feel weak in the arms just looking at it. Thankfully, my first jar should last me a long while and at room temperature, I haven't had any issues with it separating again.
I mostly enjoy this spread on toast with a sprinkle of salt. I like the slightly salty/sweet combo better than butter :)
