Used this to make peanut butter cookies and straight out of the oven they had a strange cooling/icy sensation. This was my first time baking with erithrytol so I asked my food science friend who said that’s exactly what happens if you use it 100% instead of cutting it with something else like monk fruit or xylitol. The package says it’s great for baking, and maybe it will be with the right proportions but just thought I would share in case anyone else is experimenting with sugar subs like I am. Hope that helps!
