Love my new Calphalon cookware, so decided to replace my 30+ year old bakeware with Calphalon. Love the quality and the non-stick coating. Forget about those folks worried about "warping"--almost any bakeware will do this to some extent based on the properties of metal expansion due to differences in heat of the item and the surround air. Yes, they'll bend a bit but come back flat right after removing from the oven. Never had any "splats" or "explosions" of food in the oven due to what is a common/natural phenomenon. My issue: I can't get my "famous chocolate chip cookies" to come out the same on the these, whether using the cookie sheet or the baking sheet; the bottoms come out darker and the cookies do not "spread" as I like, they stay semi-dome shaped (like the cookie scoop). I know it's due to the darker color of the metal compared to my old bright, stainless cookie sheets. I'm still experimenting with lowering the temp by 25 degrees and tried using parchment paper (which didn't change the issue, and WHY would I use parchment on nonstick bakeware anyway?). This is an issue I'm determined to "fix" as these cookies are a family fave and I must get them "right"! I've baked fish, pies, pizzas, and other items with good results.
