This is exactly what you expect from a traditional bamboo sushi rolling mat. There are inherently some problems with that design, and it is somewhat easy to overcome those drawbacks, but compared to other bamboo sushi mats, this is as good as any I have seen. One problem is that the design of these mats allows moisture from the rice and other ingredients to get into the string attaching the bamboo sticks together. The way around this is to use cling wrap to put a barrier between the food and the mats, this is the way I have seen most sushi Restaurants do it.The other way that I have found works well for me, is to put it inside of a Ziploc bag. This method works well because it’s simple and the fact that it seals it self together means that it doesn’t come apart like cling wrap can, but it doesn’t necessarily stay as close to the bamboo as cling wrap does.
