So, one thing to keep in mind is, have a paper towel with a little bit of oil on it (cooking oil, I use peanut). You'll need to slide it along the rolling bar every few sushi rolls, otherwise, the sushi will stick to it (this is for inside out rolls, though maybe useful generally).

Making inside out rolls is really easy with this. The mat on mine is tearing a bit in the corner, after a few years of use, but it still works. I never used the cutting tool, just a normal cutting board.

So much easier than bamboo mats. And wildly easier to clean.
