My son asked my to make the little round pancakes he had on a vacation last year. After speaking with my sister, I learned about ebelskiver and purchased this pan. I found a simple recipe that uses buttermilk. The batter is quite thick. It took me a few tries before I figured out the trick to it. They were not cooking clear through the middle. So, here is what I learned so you don't have the same problem. Cook it on one side. Use a knitting needle to flip it. But: let the batter plop out and into the pan first, then set the cooked part on. That's it! After I figured out the "plop" they turned out perfectly every time. Oh, be sure to grease, or spray before putting in batter each time.
