I've made the yellow cake recipe, and it's okay. Tonight I made the chocolate, which is very bland, and the yellow cake again. I've never had homemade cake/cupcakes so maybe I'm used to the taste of box mixes. And maybe the 4 standard recipes are meant to be used in the rest of the recipes in the book and not alone? Oh, and the vanilla buttercream frosting is WAY too sweet. So sweet that I had a stomach ache. I'm going to buy a new oven thermometer and paper baking cups- if that corrects my problem I'll definitely change my review and give it more stars. I'll also try a couple more recipes and see how I like them. I have been just making one of the 4 basic cake flavors, and picking one of the frostings from the begining of the book.
I do agree with other posters about the layout of the book- it's great!! I'd be happier if the cake itself had more flavor and if my cupcakes would stop buring. I'm not giving up though.
UPDATE 3/2013: So my oven thermometer was off way back then. As for the foil liners, I was using a cupcake tin and I bought foil liners only because I wanted silver liners. I won't be buying those again. I just had a party for my kids and I wanted to make the cupcakes. I once again used the yellow cake recipe. They didn't burn, but it seemed like there was too much butter ( I used the right amount). The liners looked grease soaked. I practiced making them about a week before the party. BUT I still wasn't crazy about the taste. I frosted them with a buttercream recipe I found online, and we all ate them. I will still keep trying out some recipes though- I'll take the advice and use the ones deeper into the book. There are some good looking recipes. For my kids party I ended up using a box of Duncan Hines cake mix and I used butter and milk vs the oil and water the box called for, and I added a TBSP of vanilla. They turned out good. Maybe I'm used to cake box flavors when I'm making something pretty plain.
The decorating ideas are fun and not so complicated that I won't be able to achieve a reasonable likeness to the pictures.
The recipes give extra tips and tell you how you can use a box of cake mix if you don't want to make them from scratch. The one recipe I've tried so far (candy bar cupcakes) was extremely easy. The most complicated things I had to do was separate eggs and test for doneness with a toothpick.
Some of the recipes use the basic cupcake / frosting recipe and then add other ingredients to make them different & original.
I would definitely recommend this cookbook for anyone who likes to bake but is tired of the same old boring recipes.
*******Update 11.01.11 - I've been making cupcakes about twice a month now since I've purchased this book and get rave reviews for each new recipe. The added ingredients definitely change the flavors and the decorating (so far) is a snap.
I would recommend if you're going to start making cupcakes more often that you buy a few accessories to make putting the batter into the pan and frosting easier. I've purchased a simple decorating bag with two different large tips - with this I can frost 24 cupcakes in minutes and they look professional. I also love the 'batter scoops' I've purchased. It helps ensure that my cupcakes are of a consistent size - which again makes them look prettier in the end.
The Snickerdoodle cupcakes taste just like snickerdoodle cookies, and have been a huge hit the couple places I've taken them. The Root Beer Float cupcakes, which are baked in ice cream cones instead of papers, were a huge hit with my son's middle school book club. You know when the teacher and kids are arguing over who gets to take the last one that they have to be good! :)
I can see several more recipes that I'd love to try when I have a bit more time (such as the "sliders" that look like mini sliders, but are actually made from mini cupcakes, with brownies as the meat and other stuff for lettuce, cheese, etc.). They definitely look more time consuming, though not necessarily difficult.
I would recommend this for anyone who loves to bake cupcakes and wants ideas and flavors that people will actually eat (though there are some more esoteric, not necessarily kid friendly ones too). With the option to make them "real" for those of us who enjoy "scratch" baking and "boxed" for those who don't, it has something for everyone.
