About the author

Dana loves food and utterly despises seeing it going to waste. She is a Senior Scientist at the Natural Resources Defense Council (NRDC) and one of the first to bring to light just how much food is wasted across the country through her 2012 report, Wasted: How America is Losing Up to 40% of Its Food from Farm to Fork to Landfill. Dana's work to reduce food waste has been featured on Dr. Oz, Last Week Tonight with John Oliver, CNN, NBC, The New York Times, Wall Street Journal, Fox Business, NPR, and many other outlets. She now works with policymakers, food companies, foundations, and local governments and leads NRDC's food waste team.
Along the way, she realized a key reason people waste food is that they don't have the right knowledge at their fingertips. Thus was born the Waste-Free Kitchen Handbook.

What I found interesting were the negative reviews that focused on how much the reader already knew on this topic. It puzzles me why one would purchase a guide to a topic they already know all about.
Now for my thoughts on the book: I am an experienced cook - no gourmet chef by any stretch but I can make food from scratch that people can/will actually eat. I have great cooking tools, a fabulous oven, bread maker, kitchen aid and so on. What I DON'T have is a grasp on how to maximize my food dollars and quit throwing away so much food. I've gone in spurts with making applesauce out of soft or soon to go bad apples, frozen almost dead bananas for muffins or smoothies and really tried to get past my aversion to leftovers! Nothing sticks and I needed a road map. This book provided me with what I needed - a food preservation compass.
I like that this book is broken up into easy to digest chunks (pun intended). The mix of science, statistics and food tips was just right for me. Nothing was so cumbersome or long-winded that I had to put the book down. I love the Smarter Storage section - I never could figure out which items needed humidity and which ones didn't! Organizing the freezer is one task this household is NOT good at - Dana's tips are a great refresher on how to organize and why we should.
I have a great dream of composting; although it has always seemed "too complicated" and I give up before I get started. Dana's simple approach (for all living styles) gives me hope that I can actually do this!
This book has great tips to achieve what the title suggests Waste Less Food! While every person may not need every section of this book, I do believe this book contains a nugget for everyone, even for those "in the know". And for those just beginning their journey to Wasting Less, Saving more and doing better for our environment - this book is a MUST have.

I love the sections on how best to store produce, grains, both plant milk & egg substitutes, beans, nuts, & vegetarian proteins, oils, condiments & spices; as well as the pretty detailed composting section & the one on "canning" food in jars & blanching to freeze.
A lot of good information, but I think it is lacking for me in a few ways:
First, it does not include some more detailed information on how to store some plant based items.
Second, if you are vegan or vegetarian, the waste free recipes for the most part / for me at least, are almost inapplicable. Sure, I could replace every animal option with a plant based one, but I do not always have on hand egg substitutes for more lunch/dinner type foods. I keep some for baking, but for example, a banana is not going to give you what you want for a frittata. And I'm not sure a flax egg would help there either. Not to mention that these veg options are either packaged in plastic or may require an entire DIY recipe.
I already make banana nice cream, but I will definitely try her variation for banana sorbet, as I love both lime juice & agave & I may try a variation on her sneaky black bean brownies, as I've never found brown sugar without a plastic bag.
Thirdly, this book recommends too many items packaged in plastic, which to me, is "waste" since I cannot recycle most plastic bags, & I do not want that in my food anyway.
Overall, I do recommend this if you need some more help in the food waste area. An expert may already know most of what is in this book, but if you wanted some recipes, it may be helpful for that.

It really hits at the practical things one can do to reduce food waste which is a major problem in the US. The material is very well presented and very useful. I thought I knew about food waste, but learned a great deal more after reading the book. The charts, recipes, methods to store and/or resuscitate food is something everyone should know, but I believe, don't know. For this reason alone the book is worth having on your kitchen shelf. Even those who believe they are knowledgable and "know all this" still will learn a lot from the book. I highly recommend it as a basic book for anyone that cooks and/or eats!

Great information on how to use or easily preserve specific leftover fruits, vegetables, herbs, meats, milk etc.--especially little bits of things that can be used later. There's been an answer for virtually everything I've ever looked up. It's in a very easy-to-access, attractive and useful format with an excellent index so you can quickly find the exact food for which you want information. Book also includes recipes for using up excess food and lots of helpful information on how to avoid wasting food. Highly readable, although I use it primarily for reference.

If you know your way around a kitchen there isn't any new information here. It's very basic information on meal planning and composting. Do you know how to ad-lib a soup? Or use extra veggies in a frittata? Or make stock? If yes, this isn't the book for you. I think it would be really helpful for someone just starting out but I was thinking it would help me fine tune.
