- Reviewed in the United States on October 29, 2013Bountiful celebrates the amazing garden Diane Cu and Todd Porter tend where they live in Southern California. The book is organized by type of vegetable, fruit, herb, etc. This approach helps the home cook quickly pick the dishes to make according to what's in season. I also found it straightforward to plan meals, pairing dishes according to what I had on my counter or had picked up at the farmers market.
I've been cooking from Bountiful for the last few weeks and the food is delightful. The dishes are easy to prepare, unfussy and full of flavor. The roasted pluots are a great example -- roast them in the oven with a little brown sugar and balsamic vinegar and out come the naturally sweet flavors of late-in-the-season pluots. The thyme that's added to the pan infuses the pluots with an earthy essence that adds dimension. Deceptively simple to make, but complex in flavor.
One of our favorites is the elegant to look at, but easy-to-make Fig and Gorgonzola Pillows. My family loved the combination of savory cooked onions, salty prosciutto, luscious sweet figs and pungent gorgonzola, which sit on top of a buttery, puff pastry base. While Todd and Diane include a puff pastry recipe in the book, store-bought high-quality puff pastry works very well. The pastries are impressive to look at, and the flavors work together beautifully.
We also really enjoyed the Spinach and Bacon Salad with Avocado Vinaigrette. I made it last weekend as a side salad, but with that special dressing (it includes a tiny bit of soy sauce that really adds depth), I expect it be in rotation throughout the year. I'll add grilled chicken or salmon to make it a main rather than a side salad, too.
One sweet recipe on my short list is great example of refreshing a classic. Who doesn't love lemon bars? In Todd and Diane's case, they swapped blood oranges for lemons -- the color of the curd is beautiful -- and they replaced the traditional crust with a brown butter version. I'm keeping an eye on my favorite citrus farmer at the farmers market. As soon as he's got blood oranges to sell, I'm baking these bars.
Whether you have a garden, frequent your local farmers market, or shop at the grocery store, you'll find dishes you love and inspiration in Bountiful.

Todd & Diane's poetic 'love affair' with the bounty that Southern Cali brings them will keep you anticipating what's on the next page . Fool-proof recipes full of fresh veggies written with clear directions and stories that will introduce food to you in a new perspective. The herbs and leafy greens section is one of my favorite sections. I remember reading the introduction and I couldn't put it down. As a chef & food blogger I admire the WROC's respect & admiration for all things culinary. Their phenomenal aesthetic and capability to tell a story through minimal words and delicious recipes will bring out the 'food lover' in any unsuspecting reader. I look forward to following their journey and bountiful is just the beginning of bigger things to come.

I've already made several dishes, each of which came out wonderfully, and I've given it away as a much-beloved gift. Todd and Diane explain their dishes articulately and simply, making even intimidating creations, like homemade phyllo dough, easy and fun. This book inspires me not only as a cook, but as a gardener. It's a fantastic purchase, especially if you enjoy fruits and vegetables. In the opening pages, the "White on Rice Couple" share their story--such a beautiful one. The book is organized by ingredient, making it a perfect accompaniment as the seasons change and new delicacies line your farmer's market stands. Treat yourself to this fantastic book!

Though I have never met them, I follow their blog and knew something of them before the book came out. They are known for their food photography, and in this book, their photos shine! They also are quite creative cooks. The book contains a good variety and selection of veggie recipes as well as others. They also have some good cocktail recipes.

From the opening chapters where they share their backgrounds and how they love to inspire, cook, and bring friends together, to forming their company 'White On Rice' it is evident this couple loves food! Starting with their garden they inspire the reader to get outside and start planting a garden! Then in a wonderful way they transcend from the garden to how to prepare and cook the garden Vegetables and Fruit. If you are not hungry when you pick up this book I guarantee you will be as the photographs just pop off the pages! Make a resolution for 2016 and pick up a copy of this book and change your life!

It is breathtaking - it looks more like a coffee table book rather than a cookbok, packed with photos and recipes and bound in a sturdy and beautiful cover. I haven't had enough time to page through the entire book, even though it is sitting under my desk at work right now as I type this. (I couldn't resist bringing it with me today!) Having followed Diane & Todd's blog for a while now, I know these recipes won't fall short of amazing. This would be a wonderful gift for anyone who likes to cook, but especially wonderful for anyone who likes to cook using items they have grown themselves. Thank you for sharing your art!

Diane und Todd vom Blog White on Rice Couple haben ihr erstes Kochbuch herausgebracht. Inziwschen gibt es ja richtig viele Blogger-Kochbücher und nicht jedes ist mehr richtig toll. Dieses aber ist es!
Auch wenn mir Dianes und Todds Ideen nicht immer gefallen (der sehr süße Geschmack der Amerikaner ist eben nicht mein Fall), so liebe ich doch ihre Food Fotographie. Sie ist klar, bunt, fröhlich und macht Lust auf die Zutaten und das Essen. Sehr oft gibt es auf dem Blog Einblicke in ihren tollen Garten und die Ernte daraus (sie haben sehr viele verschiedene Zitrusbäume, einfach faszinierend und schön!). Und dasselbe gilt für ihr erstes Kochbuch, nur sind die Rezepte für mich stimmiger, passender auch für uns Deutsche.
Die Rezepte sind nach Zutaten unterteilt und es gibt einfachere bis aufwendigere Rezepte. Hier ist für jeden etwas dabei. Die Fotos sind einfach der Knüller, allein deshalb ein Must have.
