I was a bit paranoid about some of the reviews mentioning low heat output and such. I mainly wanted this for outdoor wok cooking, and because of that high heat was a concern of mine. However, having tried this thing out, I find it hard to believe there are many normal cooking tasks this burner couldn't handle. It took me about an hour to fully blue, then season a brand new carbon steel wok, then cook my first meal with it. I spent nearly 2 hours trying to blue my first wok on my gas stovetop with the diffuser removed from my largest burner and never achieved even close to the kinds of results I got with this propane cooker, not to mention the smoke it put out in the house. Man does this thing get hot. I don't know if the people in negative reviews about heat just got duds or were doing it wrong, but it was pretty cold where I am by the time I was done and I was able to feel radiant heat off the burner from several feet away. You have two places to adjust the gas flow, and 1 to adjust air intake. Each one affects the flame, with some degree or another of change to the heat output. If the valve on your propane tank is wide open, you throw open the regulator and open up the air intake wide on the burner itself to allow some air in, this product creates a very hot flame. It's more than enough for what I'm doing at least.

Better Quality Control Required

I ordered this previously from Amazon many years ago, and that worked like a champ. I ordered a second one for a friend, with not so good results... Fired it up for the first time to boil a ham and couldn't get the flame adjusted. Had to keep using it until the ham was cooked. What a mess with the soot on the pot. Disassembly and inspection revealed that the burner was internally clogged with casting sand, and the sand had been painted over with silver paint. The pressure from the propane was enough to blast a small opening in the sand to allow it to light, but it wasn't big enough to allow a good propane/air mixture. After scraping out the sand, it worked perfectly.

If somebody who wasn't familiar with how these things worked were to run into this, they wouldn't recognize what the inside of the burner is *supposed* to look like. The silver paint camouflaged the sand and made it look like a casting defect.

I would still recommend this burner, but Bayou Classic should inspect the burners a little closer. I would also recommend they fire them up for a couple of seconds before final assembly.

Cooks up fast for a large group of people in no time!!!

This outdoor cooker was very easy to assemble. The flame this fryer releases is amazing. once assembled, I boiled a pot of hot water just to burn off the paint. The smell wasn't as bad as I imagined but it did have a minute stench to it. once done I fried up 20 lbs of wing flings and eight pounds of whitings fish to feed a group of people in no time.I was amazed at how beautiful and powerful the blue flame was. Everyone at the cookout kept asking me where did I get this product from and I referred them to the Bayou Classic brand. Even though this fryer is very small and compact, the flame is big and works wonders. I will be cooking out every weekend now that I know that this fryer heats up very fast. This summer will be known as they year of the deep fryer Bayou Classic style. I am so looking forward to cooking out with my family every weekend!

Bayou Classic burner worked great.

The Bayou Classic burner worked perfectly. We have used it a few times for shrimp boils with excellent results. The build quality is great, providing a very stable platform for the Bayou Classic cooking pot. We have tried using the burner on concrete and on dirt/gravel with good results. We purchased a blue rhino propane canister from the grocery store and it fit perfectly on the gas input with no complications. Overall I would recommend this burner - the only issue we had was in higher wind the flame would go out. This is to be expected with this sort of use scenario thought. Blocking the wind resolved the issue.

THE PERFECT COMPACT OUTDOOR COOKER

I received the Bayou Classic SP10 high-pressure cooker, propane today. Unpacked it, read the instructions and personal injury or death warnings. This appliance must be operated by a sober & responsible person only who never let's the burner out of their sight when lit.
Mine came with the spring type air intake adjustment. I'd rather have the screw type as this one loosens the gas hose upon closing off the air. If the hose is any tighter you can't adjust the air flow. Just keep a crescent wrench handy. The paint burn-off is pretty smelly also.
Other than that, it's pretty simple. The only assembly I encountered was attaching the gas hose/air adjuster/spring to the burner assembly. I attached the other end of the hose to a 20lb propane tank, made sure the flame adjustment valve was off and s l o w l y opened the tank valve 1 turn. I then put gas leak detector on all the connections, put a match to the burner and lit her up. The air adjuster was open half way and I got a long yellow flame. I had to open the air all the way to get the blue flame. I then opened the tank valve s l o w l y all the way and adjusted the flame with the regulator valve under a 20 quart pot containing 10 quarts of water and started the stop watch. It took 11 minutes to bring the pot to a rolling boil with the flame adjuster valve open 1/4 turn by that time. The wind was a little gusty but the flame never went out. I'm certain that if I go ahead and set the flame valve at 1/4 turn to start it will boil sooner. No soap bubbles at the gas connections = no leaks.
I see a low-country boil in the near future and it won't heat or smell up the kitchen. I would recommend this product.
