In 1849, when Domingo Ghirardelli immigrated to the United States from his homeland of Italy, he had dreams of striking it rich in the California Gold Rush. He settled on opening a tent-store in Stockton, CA, selling various supplies and confections to fellow miners. With his new business proving successful, Domingo decided to open a store and hotel in San Francisco. After a major fire in 1851 destroyed his businesses, he began to rebuild. In 1852, he formed a new confectionery company that would soon become the Ghirardelli Chocolate Company.

Domingo would be proud to see how his chocolate company has not only grown, but flourished over the years. It started as a dream in the mid-1800s and it is now a thriving company and a leading brand of premium chocolate.

I had been eating 85% cacao, about a half-ounce piece each morning with my decaf green tea. When I first switched to these Ghirardelli 100% cacao bars they seemed bitter. But gradually my taste buds adjusted and I began to like these 100% cacao bars. Now after about two months my morning half-ounce pieces taste delicious. My reason for switching was to reduce my sugar intake, which I have done also for some other foods that I regularly eat, and I have found it really possible to change my taste buds. I have read that sugars contribute a lot to unwanted weight gain, especially for persons like me who ate and drank many sugary foods and drinks when we were younger. Eating too much sugar apparently gradually causes insulin problems which can lead to weight gain unless dietary changes are made. So I recommend switching to lower-sugar chocolate, maybe starting with 70% cacao and then later moving to 85% cacao, and then to these 100% cacao bars, to get the full benefits of cacao without the sugar. The health food experts who consider sugar to be a toxin seem to me to be mainly correct, though small portions of foods containing sugars, such apples and oranges, surely have health benefits, and perhaps even very small amounts of honey or maple syrup. But for me, danish pastries and the like are foods of the past.

"A 2011 Swedish study found that women who ate more than 45 grams of chocolate a week had a 20 percent lower risk of stroke than women who treated themselves to fewer than 9 grams of the sweet stuff.

Regular chocolate eaters welcome a host of benefits for their hearts, including lower blood pressure, lower "bad" LDL cholesterol and a lower risk of heart disease.

Because it's rich in fiber, dark chocolate can actually help keep you full, so you'll eat less, Dr. David Katz, founding director of Yale University's Prevention Research Center and HuffPost blogger told The Huffington Post. Regular chocolate eaters might do themselves a favor by treating themselves to a bite instead of snacking on "11 other things first" he said.

A small Italian study from 2005 found that regularly eating chocolate increases insulin sensitivity, thereby reducing risk for diabetes.

Cocoa has anti-clotting, blood-thinning properties that work in a similar way to aspirin, Dr. Fitzgerald writes, which can improve blood flow and circulation.

Because of chocolate's ability to improve blood flow, in particular to the brain, researchers at the University of Reading hypothesized in a small 2011 study that chocolate may also increase blood flow to the retina, thereby giving vision a boost.

That boost of blood flow to the brain created by cocoa's flavanols seems to make people feel more awake and alert, and, in a small British study."

I am using Ghirardelli's "unsweetened chocolate baking bar" as a kind of "bitter medication" to prevent heart problems. Having heard from several doctors/dieticians that chocolate contains elements which are good for the heart, I started looking for chocolate which is as pure as possible and contains as little sugar as possible. Ghirardelli's 100% unsweetened chocolate was one of the products which I have tried, even though it is being offered as "baking bar."
At first the bitterness of the chocolate was irritating me, but I soon got used to it, just like one can eat lemons without peeling them, or drink coffee without any sweeteners. Before that I occasionally had to use special blends of supplements/vitamins (such as Dr. David Williams' "Total CardioCover") to prevent occasional chest discomfort, which is not uncommon for a 60+ y.o. man. However, since I started taking 1 chip of Ghirardelli's unsweetened chocolate a day (1/8th of the 4oz bar) I've never experienced any chest discomfort again.
I would not recommend it as a replacement of the doctor-recommended therapy for someone with real cardio-vascular problems, but it is a good supplement to such therapies or a one of the means to prevent cardiac problems. If you are bothered by the bitterness of this "bitter pill", you can take it with something like a dried fig. I also like the fact that this bar stays crisp and doesn't melt even at 95oF heat.

I bought this product as a keto snack (3g net carbs per square). I just finished my first bar. I can only eat one square per sitting because of the deep rich dark taste. If you are expecting it to taste like Hershey chocolate bar then you will be disappointed.

Do you remember the first time you drank coffee? Likely, it didn't taste good but after a while your taste buds changed to where it now tastes good! This is a similar product. My first square tasted bad but now I am really liking the taste! It is not sweet it is dark and rich, slightly chalky. A nice low carb snack! I keep mine in the freezer..
