Because Ghee has a higher flash point than butter, it doesn't break down at all during cooking. You know what I'm talking about. You use butter to sauté but find that you have to keep adding more and more as you go because it mysteriously disappears or browns onto the pan. That doesn't happen with Ghee.
I'm not one to participate in the many common dietary trends. As someone with a bit of formal training on both nutrition and the workings of the human body, I believe that balance and moderation are the keys to excellent nutrition. My mantra is: everything in moderation. We do need some cholesterol in our diets, just not as much as we'd like. We also need carbohydrates. The great majority of us, who aren't sensitive to lactose or glutens actually should be eating these things.
That said, I am not a fan of GMOs these days. My viewpoint is not dietary in nature. I certainly don't want to get into my environmental concerns or discuss the virtues of anti-trust regulations. I'm just going to say that I appreciate the fact that this product is made from organic milk alone. The milk used in this product is harvested in the spring and fall only, when the cattle are permitted to graze exclusively on non-GMO green grass (the growth phase of the grass affects the nutrition it provides).
The fact that the cattle are restricted to a diet of green grass alone affects the flavor of their milk, which in turn affects the flavor of the Ghee.
I am an F1 Hybrid, myself. Yes, my father is 100% Persian while my mother is a typical American of mixed European heritage. As such, I learned to cook a few traditional Persian delights, many of which incorporate ghee. It is for this reason that I have experimented with many different varieties of Ghee. This brand is far superior in flavor and texture. And while my initial interest in ghee was in ethnic cooking, I've found that I use it in a broad array of dishes these days.
Further, it pleases me that this company seems committed to ethical business practices and conservation of the environment. These folks provide a truly superior product with a social conscience. If you've never tried cooking with Ghee, you'll be delightfully surprised at how much buttery flavor you can infuse with such a minimal amount of cholesterol added (because the ghee doesn't brown or dry up during cooking, and you can use less). The manufacturer doesn't add salt to this ghee. Additionally, the product is free of trans fats, colorants, and preservatives.

I do remember receiving a card with my first shipment, long ago, that requested feedback on Amazon, but did not offer incentive for such. I am reviewing the product now, not then, because of my new interest in GMO-free purchasing decisions. This is a favorite staple in my kitchen, and I was glad to find that it is GMO free, though that fact was not among my reasons for purchase initially.
This product is advertised as having a "grainy texture" - It does not have a grainy texture, it is very smooth and does not have a grassy-flavor (if that is what they meant by it) - It just works well as a stir-fry oil and adds a creamy texture to chicken dishes and vegetables that have been cooked in it, or steamed first and sauteed afterwards.
Pros:
It is organic from grass-fed bovines.
No cholesterol
Rich in nutrients.
Creamy texture.
High heat tolerance. (I tried it at 400 and there was no loss of taste, texture, or burning)
Making a blend of spices (your choice) and mixing it with the Ghee for an hour will result in a tasty basting sauce.
My favorite are eggs: Scrambled, Omelettes, fried eggs .... absolutely delicious! smooth texture and truly better than using butter to make the omelettes. Less of a sputtering making fried eggs - probably due to the lack of water content on the Ghee - Just make sure that the eggs are at room temperature for better results when frying.
Cons:
The price is pretty steep for such a small jar.
For those expecting a buttery taste on their popcorn, this is not going to fly.
We used organic kernels (Found on Amazon) and a hot air popper.
We also used the aforementioned kernels in a whirley-pop.
We used the Ghee to mix in the popped hot air kernels ---- There is no buttery flavor.
We used the Ghee in the Whirley Popper to pop the kernels --- There is no buttery flavor. Adding more of the Ghee to the popped kernels only resulted in moist and oily popcorn but did not enhance the flavor.
Having stated the above, I will say that the next batch of Whirley popped corn will be made with Ghee because it can easily tolerate the high heat and nothing in the popper burned.
For added flavor we will use spices or commercially available popcorn flavor shakers easily found at local grocery stores (Molly McButter and Kernel Season's are common) or will make our own from organic herbs and spices.
Making your own Ghee from organic butter is simple enough, finding organic butter that won't break the bank is harder to find.
In conclusion, we really like the smooth texture of this Ghee brand and its high-heat tolerance properties. Not having to over think the GMO, preservatives, and chemical compositions of the product is priceless. We will continue to use it in addition to Organic coconut oil (which works well with popcorn too since it too, has a high burn point), Organic Olive Oil, Organic Macademia Nut oil (also found easily on Amazon) and Avocado Oil (which is flavorless and lends itself well to seasonings that won't compete for attention)
Every oil has its place in our pantry for variety in flavors and different types of meals.
