it rises and acts just like wheat flour

This is not WHITE spelt flour, it is whole grain spelt flour, but I have been using it in place of wheat flour for several years now and in most recipes it works just the same as wheat flour. In doughs raised with baking powder and baking soda, it rises and acts just like wheat flour. In yeast-raised doughs, because of its low gluten content, only one rising (rather than letting the dough rise, punching down, and rising again) works best. For instance, for foccacia or pizza, I make the yeast dough, leave covered in the fridge overnight, where it doesn't rise much, then next day roll out into pizza shape, let rise once, top with pizza toppings, then bake. In taste, it is very similar to wheat flour, perhaps just a little "nuttier." I've read Wheat Belly and I do not have "gluten intolerance;" however spelt's genes were not altered by intensive cross-breeding as wheat's genes were (from what I have read) in the 1940s. This in my opinion, means it is safer for health. I prefer eating grains that are the same as have been eaten by multiple generations of humans without gastric troubles, which of course, I don't want! ... and spelt flour is tasty, fine, works almost like wheat in recipes, and produces pleasant, agreeable baked goods.

A truly superior product

Take it from a professional chef, this is a truly a terrific product. I replaced all of my regular whole wheat use with this wonderful product, and haven't looked back since. It's far more absorbent and malleable than whole wheat, and you can actually use a greater percentage of spelt flour to white in yeast bread, for a more healthy, flavorful loaf. I get a superior rise, and the end product is more puffy and appealing. I have even had good luck using it to make roux for sauces with very acceptable results. All this, and it's good for you. Bob's is better than generic, and worth a few extra cents. I only wish they sold it in larger bags, though I'm finding the 24 oz. bags becoming more and more user friendly. Good job, Bob's, and good job to Amazon for having it.

Amazing flavor, easier on the stomach than modern wheats.

I love the taste of spelt, and this is the most economical way to purchase it that I've found where I live, so I'll be purchasing regularly. Spelt flour absorbs water differently than wheat flours, and often inhibits the rise of breads, so I usually use it in conjunction with other flours (half and half with white AP flour makes wonderful hamburger buns!). It also makes amazing pancakes on its own. The flavor is sweet and nutty, much nicer than plain whole wheat. Soaking is generally recommended to avoid a gritty texture, but it doesn't take long, about 15 minutes for the pancakes. Highly recommended!

great for frying and breading

In an effort to be healthier, I started frying with Virgin Coconut Oil and using white whole wheat flour. I then decided to cut carbs by using coconut flour as a suggestion by Rocco Disperto (not sure of spelling and don't care). The result was horrible! Looked like fried but the texture was soft. NOT what you expect fried to be. No crunch. No good! I had to add some white whole wheat flour to the coconut flour to get some of the texture back.

Well, now that I found this, I mix this in with the coconut flour and now I can enjoy fried food again, the way it should be. I might try it without the coconut flour. It also works great for those items you will bread. I don't use the egg. I just wet the protein (usually chicken breast) with water, roll in the Spelt, lay it in my wet hand and gently pat the protein with water to make it sticky, then dip in the bread crumbs or breading mixture. AWESOME.

You may have to fry at a slightly lower temperature though. It seems to burn easier than regular flour at higher temperatures.

Nice flour for baking

I've been buying this brand of spelt flour for about three years now here on Amazon, and love how great it is for baking. One of my favorite food bloggers, Chocolate Covered Katie, first turned me on to spelt flour, and it's a delicious ancient grain that doesn't have the hearty flavor of whole wheat flour. It creates light, fluffy products, and is nice for those who have gluten sensitivities.

Tip: you can also freeze your extra bags of flour if you don't go through them that quickly. I just take them out of my freezer as needed, and work just as well as if they hadn't been in the freezer.

Good, but not for me.

Flavor is good and more filling than regular flour. I have not eaten regular flour in a long time due to problems with digesting it. I had read that spelt digested easier and some people reported less or no problems eating this compared to modern wheat. Unfortunately, gluten is my problem and not just the modern wheat and I ended up with a major flare-up. This is a type of wheat, but an old type. I would say that if wheat is a problem and still want to try this, start with a small amount and see how you react. If it is gluten, don't try it.

I use this spelt to make wild yeast (sour dough) levened bread. It works well. My family has enjoyed the breads. One caution is that spelt has a more delicate gluten structure than normal wheat and I have found it works better by using a stretch and fold rather than active kneading.

The flour gives a certain "Je Ne Sais Quoi" in this flour that make it good to add to breads. I usually mix with some dark rye and wheat.

Overall I have been pleased with Bob's Red Mill products for their consistancy and excellent flavor. This flour is no execption.

I got this because it is significantly less expensive than gluten free flours. I am not a celiac, however gluten normally gives me a lot of trouble. I did a bit of research and found that the gluten in modern wheat is significantly different now than from ages past. It seems the alterations caused by human selective breeding has caused gluten to become significantly more problematic for people. This was amazing however. I made the tastiest bread and pizza dough and the gluten didn't bother me at all. You can tell that the gluten is significantly different. It is much more fragile, and weaker at doing what gluten does. you may find adding a little xanthan gum helps give it a boost.
