After moving to the United States, Cuong Pham was hungry to recreate the tastes and smells of his childhood in Saigon. But not even the vibrant Asian markets of San Francisco offered the intensely fragrant first-press fish sauce, nước mắm nhi, that Cuong remembered from Vietnam. So in 2006, Cuong decided that if he couldn't find it, he would make it — and started Red Boat Fish Sauce. Returning to Vietnam, Cuong expanded a small, family-run facility on the tropical island of Phu Quoc.

Protein Packed Ingredient
Red Boat contains 2.5 lbs of anchovies per bottle, giving our fish sauce a beautiful amber color from the healthy concentration of anchovies. Red Boat contains 4 grams of protein per tablespoon, twice the amount of protein of most fish sauce you’ll find on the market.

Preparation
Preheat oven to 425 degrees. Peel and finely chop ginger. In a large bowl, combine all ingredients for meatballs. Scoop balls, the size of large walnuts, and place on a parchment-lined sheet tray. Bake meatballs until just cooked through, 10 minutes.

Made from a two hundred year-old, chemical free, artisanal process, Red Boat uses only the freshest cá com (black anchovy), salted minutes after leaving the sea then slow aged for over a year in traditional wooden barrels. Red Boat anchovies are sourced exclusively from the crystal clear waters off the Phu Quoc Island archipelago. I purchased this sauce for an Asian recipe that called for fish sauce, and this one is highly recommended by professional chefs. It gives a great flavor for Caesar salads and other Asian dishes, and is the best I have used so far. A little goes a long way with this sauce and I would highly recommend its use in any recipe that calls for the use of fish sauce.
