We have owned so many knives that my memory of most of them tends to run together. Nearly all of them were purchased from places like Wal-Mart, Target, or similar stores. Some knives were a little better than other knives, but few of them were remarkable. This knife is remarkable.

When I first picked up this knife, I noticed two things immediately. First, the blade was beautiful. Second, I thought the handle looked a little bit, well, cheap. The only negative comment I have about this knife is the handle. It is plastic and has a rough surface that is probably intended to permit a firm grip on the knife. However, the plastic can probably take much more abuse than a wood handle, so while its appearance detracts slightly from the knife, it is probably better for kitchen use than knives with expensive wood handles.

Let us talk about the blade. What a blade! The blade is gorgeous high carbon stainless steel. Fundamentally, that means that the heat-treated blade is harder than many other steels, making the edge longer lasting than the blades on many other knives. More importantly, this knife is rust resistant. Thus, this knife needs less sharpening than other knives. We have used this knife constantly for several months and the edge seems just as sharp as when we received the knife.

How well does it cut? This knife cuts excellently. It goes through green onions, tomatoes, potatoes, meat, and everything else you routinely cut in the kitchen. Because the handle is designed to resist slipping, and because of the width of the blade, there is little likelihood that your fingers will slip under the sharp blade. Thank goodness for the non-slip characteristics of the handle.

Had a Victorinox Swiss 10 inch blade and it is wonderful, but was too long for chopping small vegetables as had trouble keeping fingers away from the blade. This 5-inch knife is fantastic. Chops great, easy to handle and manipulate. Am glad I got a smaller size knife as use it constantly.

What can be said about this knife that hasn't already? I just wanted to add my voice to the cacophony of approval for this excellent knife.

More expensive chef's knives can be had, yes. Higher quality, too. If you really love cooking and you have a bunch of money to spend and you really care about the quality of the steel and the heritage of the design and the exact alloy that went into the blade and the quality of the wood on the full-tang handle, this is probably not the knife for you.

If you cook at all, though, and you don't have a bunch of money to spend on a fancy knife, then this is easily your best option. Even if you've never bought a knife outside of a block set before. Even if you don't really like to cook. Especially if you've only bought knives in a set or don't like to cook, even. This knife is so good that you will find yourself wondering why you didn't like chopping before. You will hate cooking away from home because it will mean using a knife that isn't this one. It's that good. I bring it along when I'm going to cook somewhere.

Let's talk about the steel. Who cares? If you're buying this knife you probably don't. You don't need to. All you need to know is it comes sharp and it stays that way, and it hones up nicely with a diamond rod. It cleans easily, it doesn't rust, and it's got a nice weight to it. The shape is as it should be. Don't stick it in the dishwasher, although you could probably get away with it a few times. But don't.

Let's talk about the handle. It's made of some kind of plastic, but again, who cares? It has a nice texture that keeps it in your hand, the shape is great for prolonged use, and it doesn't leak like some hollow-handled knives do (water can get in and rust your handle from the inside; not here).

For this price, for this knife, it's a no-brainer. Buy it. Buy it, buy it, buy it. Even if you have fancier knives, buy it. Even if you don't think you need a knife this big, buy it.

I first purchased the 40520 Victorinox Fibrox 8-Inch Chef's back in 2008. My "go to" knife has never let me down. It rests in a drawer along side my Wusthoff knives (move over Wusthoff..) as well other Victorinox knives that I have purchased after falling in love with my 40520.
I now own also the Victorinox bread knife, slicing knife, boning knife, and paring knife. All the Victorinox knives I mention are equally as good as their chef's knife, and I consider them essential knives in my kitchen. The chef's knife is the one that I use the most.

Having been so pleased with all of my Victorinox purchases, I was excited to try this Swiss Army set out. I couldn't be happier with this set. The knives are beautiful, as well as the honing steel. SUPER sharp that glide through food like it's butter, ...what's not to like? The steel feels very comfortable in hand, and is equally as long as the blade of the knife, which is good. My past experience with the 40520 tells me I'm going to love these knives just as much or more.

Comparing the 40520 and the Swiss Army Chef's side by side reveals very little difference between the two knives other than the handles. The blades appear the same, aside from what is written on them. The Swiss Army handle is just a bit longer than the 40520. The handle is more tapered than the 40520 yielding a more ergonomic feel to it. There are indentations on the sides of the handle of the Swiss Army which do not exist on the 40520. These indentations make for easier gripping. The top of the handle has a slight arch as well. Both knife handles are of slightly different textures, and both are slip-resistant. Both knives are sharp!
