Is einkorn gluten free?
Einkorn is a type of wheat containing gluten. Its unhybridized nature makes its gluten weaker, easier to digest than modern wheat. Not safe for celiac disease, but often tolerated by gluten-sensitive individuals.
Why does einkorn flour cost more than regular flour?
Einkorn has never been hybridized for modern farming and the yield on einkorn is is considerably less than that of modern wheat. The yield is also smaller is because we grow it organically and it is also certified free from glyphosate residue
What is the difference between Jovial All-Purpose Einkorn Flour and Whole Wheat Einkorn Flour?
Our whole wheat/whole grain flour is our organic einkorn wheat berries ground into flour. Our all-purpose flour is the whole grain flour with a portion of the bran and germ removed. Our traditional pastas and cookies are made from the AP flour.
Can I substitute einkorn flour 1:1 with regular flour?
Einkorn may be substituted cup for cup with regular whole wheat flour in some muffin, pancakes, cake, and cookie recipes. However, sometimes the amount of liquid in the recipe needs to be reduced by roughly 15-20%.

So I tried these wheat berries. What a shock! It's about a different is canned tuna and fresh tuna. I had no idea real wheat could taste like this. Face it, we think of wheat as tasting like whatever we put on or in the wheat! I made these wheatberries the way you would make rice two parts water to one part wheat. I used the rice cooker first. The next time I used the stovetop. Both methods worked equally well and were equally easy. I couldn't believe the taste. It sounds like an exaggeration but wouldn't you think you'd have to put something on it? I tasted a small spoonful. They were naughty, Harty, chewy. I could eat them straight from the pot. To make it even better I had no digestive problems whatsoever. I also purchased their ground flour and made bread from the recipe on the bag. Easy and everyone loved it.
The only thing I would recommend is if you try this and love einkorn, consider finding it in bulk somewhere. These packages are kind of small and make for excess garbage. My next purchase will be of a 22lb bag from a local co op. :D
I received a nice 16 oz box of whole wheat berries. It's nice that there was a little bit of info and history about the berries on the box along with several recipes to use the wheat berries both whole and in the ground form. I was able to pour the entire box of wheat berries into our high powered blender and it easily turned it into a fine flour. The box conveniently makes enough for the whole wheat bread recipe on the box. The recipe, by the way, made a great loaf of bread. Nice crumb, good flavor, and freshly ground flour really does make a big difference. I'd like to try some of the other recipes on the box and the berries in their whole form as well.
I will definitely purchase this again, but it is quite pricey for just enough wheat berries to make a single loaf of bread. It will be a special occasion purchase, for that reason.

However. For this listing though.. it's only a box of 1 not 12. I gave this a 5 star because i love Einkorn berries and the seller quickly refunded me when they realized that listing is incorrect.
Update: months later the seller still has not updated the listing. The 1 Star is for the seller not the product.
