I have not explored all of the options with this amazing and SUPER powerful blender yet. So far I am making daily protein smoothies from homemade recipes. My husband is very happy about that.
My next attempt is to make "hot" soup with the Vitamix using ingredients that are not hot. My daughter is excited for us to do this soon.
I love the various settings and the heft of the base. The pitcher lifts off and is placed on easily without needing to be locked in place. There is an extra safety feature that requires you to turn the blender on using a toggle switch on the rear right-hand side. My granddaughters like to see the lights turn on when it is switched "on."
It is very loud when it is crushing large ice cubes. However, it will crush them quickly and then it is smooth and quiet. Actually, it is remarkably quiet for its power.
I had hoped that it would be powerful enough to really pulverize flax meal that I would add, but it is not. If I do not want larger chunks of flax meal in a smoothie, I need to zap that in a coffee grinder first until it is a fine powder.
Here is one of my recipes for a super-charged, antioxidant, anti-inflammatory, protein boost, cherry/berry smoothie.
Alter the amounts to taste and according to the number of servings.
Fill pitcher 1/3 with ice
Add 3/4 cup non-fat plain Greek yogurt
Add 1 banana
Add 2 scoops of "Body Fortress" "Advanced Whey Protein" vanilla flavor*
Add 2 scoops of "Amazing Grass" "Green Superfood"
Add 3/4 cup fresh or frozen/defrosted cherries
Add 1/2 cup of fresh or frozen/defrosted strawberries
Add 1/2 cup of fresh or frozen/defrosted blueberries
Add 1-2 fresh kale leaves washed and ripped into small pieces
Add 2-3 tablespoons of honey (to taste to cut tartness of berries)
Add 2 teaspoons of Neilsen-Massey Pure Vanilla Paste
Add 1 teaspoon of Almond extract
Squeeze the contents from 1-3 "Now" Omega 3-6-9 1000 mg Essential Fatty Acid Soft Gels
Pour 1 cup unsweetened plain or vanilla flavor almond milk over contents
Pour 1 cup pure cherry juice (you can get it at places like Trader Joes) over contents
Place lid on - turn on - set to snowflake
PULSE
It will be really loud for a few second until the ice is broken up. Let it continue blending until you see all ingredients mixed thoroughly- then give it another zap or two, just to be sure. Taste, pour, and enjoy.
This make 4 large servings in a full pitcher and has a good amount of protein, and almost a daily dose of fruits and vegetables.
My granddaughters do not know that they are drinking their greens, kale, flax seed, or essential fatty acids (high Omega). They only know it tastes wonderful. The cherry versus strawberry lends to the sweeter taste and is higher in anti-inflammatory properties.
*I like this protein power because it mixes well, tastes good without any chemical tastes, and has some of the highest protein to calorie and fat ratio I can find, particularly for the money. Vanilla is always a good best because it can even go with chocolate.
Try my smoothie out and let me know if it worked for you. :)
Update June 8, 2015: I have now made hot soup from room temperature ingredients. Easy! Last night I took frozen strawberries rinsed then off and made stawberry Bellinies with a tad of simple syrup (previously made with Stevia), a bit of Chambord and a sparkling brut. They were the hit of our neighborhood GofT night. This machine can do anything!
So after a year of BlendTec's 64 oz container that can't be filled more than half way . . .investing in their jumbo "wild side" 90 oz container that STILL holds less than Vitamix's 64 oz container, I sold my BlendTec and bought this Vitamix and couldn't be happier.
Gone are the days of hoping I could get just a "little" more than 32 oz of hot soup into the container before puréeing . . .only to watch astonished as the lid flies off and soup coats my upper cabinets in a creamy mess.
See that raised lid and those nifty clips on the Vitamix lid? There's a REASON Vitamix is most often used in restaurant kitchens. The ability to put everything into the blender . . .filled to capacity, turn it on and walk away is absolutely priceless. That feature right there, made this blender more than worth the extra cost.
Both blenders do a great job blending . . .but I don't have to pre-chop everything like I did with my Blendtec. But even more importantly . . .while not exactly heavy at 13 pounds, Vitamix IS about five pounds heavier than BlendTec. That added weight gives my Vitamix much more stability. While walking across the counter wasn't usually a problem with the BlendTec . . .that was ONLY because I had to baby sit the thing to keep it from happening or having the lid fly off. The Vitamix is completely stable and doesn't move from where its placed no matter what I throw in it.
You've no doubt read that this blender will fit under your upper cabinets . . .MEASURE if that's important to you. Older homes are more likely than not, going to have upper cabinets too low to accommodate the machine with container installed. It doesn't fit under mine, but I'm STILL happier than I was with the Blendtec that did fit. The additional 48 oz container fits perfectly and the others are stored in the cabinet above.
Some reviewers ding the fact Vitamix advises against placing the container and lid in the dishwasher, but what's easier than a self cleaning blender? A difficult to clean appliance is a worthless dust catcher. To clean, all I have to do is fill half full of water, add a drop of dish soap and turn the dial to the clean mode. No waiting two hours for the dishwasher to cycle through and my dishwasher is freed up for other items. Making this product BPA free and shatterproof has its trade off . . .I'm more than happy to spend ten seconds adding water and soap to clean than I'd be were this dishwasher safe but contain BPA which is proven to be harmful.
With regard to sound, I've noticed that both the 64 oz and 48 containers, with their square outer corners are remarkably more quiet than when the 32 oz wet or dry containers are used. The 32 oz containers fit inside the brackets while the 48 and 64 fit outside those brackets. Since the other Vitamix models come with containers that fit inside those brackets, that would make them noticeably louder. Not sure if that's what makes this model more quiet or not . . .but since the 48 oz container is readily available and fits all home models on the market, it's worth considering and I'd be interested to hear from others regarding container noise.
The only negative thing I have to say . . .isn't about the blender but rather the included cook book. It's nicely bound and full of great ideas . . .but not, in my opinion, well executed. Every recipe I've tried so far, had to have a major seasoning adjustment. It seems the chefs must be used to preparing bland baby food.
In short, I wish I'd not been turned off by the Vitamix price tag to begin with and just taken the plunge. The lesson cost me an extra $900 that I could have saved had I just purchased the Vitamix to begin with. I couldn't be happier with this purchase.

UPDATE

I've been making my own peanut butter since upgrading from the a Breville to the Blendtec. However, I just tried it in the Vitamix and WOW! No oil necessary . . .not a drop! The only way to get peanut butter in the 3 horse power BlendTec was to add oil . . .not so with this 2.2 hp Vitamix. Straight peanuts, nothing added. Simply amazing!
Top reviews from other countries
With the purchase, you get a useful quality 'push-down' safety tamper (to guide any food bits that aren't making it all the way down to the spinning blades... although that is actually a rare occurrence, thanks to the short, wide and 'squat' stance of the blending jar. Clearly a well thought-out design)! Also included in the kit is a comprehensive instructional DVD presented by a professional chef, as well as a proper book containing over 60 recipes & other great ideas. Moreover, this appliance is backed up by a whopping 7 year warranty! Its 'build solidity' and heft almost remind you of the virtually indestructible household appliances of the 1940's and 1950's that you found in your parents' or grandparents' homes (as the case may be)... not to mention the aesthetically satisfactory looks that this machine enjoys.
I personally would've much preferred a tempered glass blending jar instead of the plastic one provided (as with some rival brands) but we are told that this is so that it won't break if it falls to the ground or otherwise suffers inadvertent but inevitable knocks here and there about the kitchen. I look forward to observing how this plastic jar fares over time (i.e. if it will fade, discolour, 'haze over', scuff, scratch, mark and generally start to look shabby & nasty compared to a solid glass one - just like those lamentably gone, nice old fashioned glass automobile headlight-lens covers versus the nasty, flimsy, scratch prone, modern plastic ones - with the glass ones overwhelmingly maintaining their crisp pristine looks throughout the lifetime of the blender and indeed the vehicle). I hope this component (i.e. the blending jar) will prove to be as much of a quality item as the main appliance itself (for the 'proof of the pudding is in the eating', as the famous saying goes).
I am hoping to shed some weight with all the fresh, raw, 'high fibre' veggie/fruit smoothies and soups I will be making with this Vitamix blender/processor. Good luck to me indeed, and 'happy/healthy ownership experience' if you hopefully decide to invest in this back-breakingly expensive but magnificent machine! REMEMBER: you can skimp on many other things in life and probably get away with it, but you CAN'T skimp and SHOULDN'T WANT TO skimp on your health (though that doesn't mean that the good people at the Vitamix company shouldn't revise their pricing structure either; they really should)! If used properly and regularly, this machine holds the promise of significantly improving your health with fresh, raw, plant-based blends... therefore please DON'T consign it to the usual status/role of 'dust gatherer' once the novelty wears off (as with so many other 'once new', 'once shiny' and 'once trendy' kitchen appliances that many of us have). You may uniquely think of this machine as your personal, loyal & tirelessly dutiful pet appliance; that 'special one' that is spared such a sad fate. All the best from MM and the very best of health to you all out there!
My wife and I finally upgraded our old Kenmore, a faithful servant for more than 20 years, and we couldn't be happier. Like kids in a candy store we spend the day thinking up new recipes to try out when we get home. And the Vitamix doesn't let you down. As solid as a tank and precise as a laser, it takes everything you care to throw at it in stride, never straining and never missing a beat. I was bit disappointed that the container is not glass and not dishwasher safe, but as others have pointed out the danger is that even tempered glass may chip. And the auto-clean function is awesome so who needs a dishwasher. Fully deserving of 5 stars.
Yes it's expensive but the quality is the best. Noisy also but most, I believe, are also noisy. if only minor or simple blending is needed, one could consider less expensive alternatives.
