I used one whole jar from my first batch of yogurt as a starter for my second batch and used the same amount of time. I had heard from somewhere that with vegan yogurt you needed to use starter from the packet each time. Well, this batch came out nicely, although the yogurt was much thinner. I still like it a lot and the thin yogurt was great over a spicy vegan black bean chili. For the next batch I will start over with the packaged yogurt starter. It's really good and I already bought my second order of four because I'm sure I'll be needing it soon. The instructions inside the packaging tell you to store the unused packets in the freezer. Oh, and don't use aluminum bowls/utensils. Stainless steel is okay.
Note: Instructions say you can make 32-64oz of yogurt with one packet of starter. I made 32oz. I'll try 64oz soon.

Why would a company with the name "World Health" sell this to make healthy yogurt and add maltodextrin?
Here are the steps I use to make vegan yogurt:
1) Add 1 cup water in the IP, place your heat-safe stirring utensil in the pot (I use a silicon spatula) close the lid, and set it to pressure cook for 5 minutes. After timer goes off, release the valve, and discard the water. This step is necessary to sterilize the inner pot and your stirring utensil.
2) Add soymilk to IP, and use the SAUTE function to bring the milk to 185F (I have a digital food thermometer I use)
3) Press CANCEL on the IP, then remove the inner liner with the milk and place it on counter to cool
4) Allow the milk to cool to 110F (about 30 minutes)
5) Once the milk has reached 110F, add the inner pot back into the IP, and add in 1 yogurt culture packet (if starting for the first time) OR 1/2 cup of yogurt from the last batch you made, and stir.
6) Set the the IP to YOGURT for about 12 hours, and then you've got an amazing batch of dairy free yogurt!
The first thing I do whenever I finish making a batch of yogurt is immediately set aside 1/2 cup of the freshly made yogurt into a small container--this way, I always have starter on hand to make a new batch! The longest I've kept my starter in the fridge between batches is 4 weeks, and it was still good and made a perfect batch of yogurt! I know a lot of websites say that you can't use soymilk with additives, but the soymilk I use from HEB does have additives, and the bacteria still culture it just fine. Would highly recommend this brand for yogurt starter because one packet of starter has lasted through several cultures for the last 3 months!
