Solid, sharp and a pleasure to use
This is my 7th product from Zelite Infinity and once again this knife does not fall short. It is solidly built and feels robust and great quality in your hand.The 6 Inch blade on this Utility Knife is ideal for everyday tasks around your kitchen when the paring knife is a little too small and the chef knife would be overkill. I use it mostly for slicing up fruit, cutting sandwiches and general fast work with veggies.The blade is made from one of the best cutlery materials on the market and comes with a staggering 61 Rockwell hardness meaning it can be made razor sharp and keep its edge for a very long time.I simply love the handles on these Zelite knives – the classic design that has their unique stamp of excellence in the form of a small multi metal mosaic rivet – it really does look the business. The handle size and rounded shape could not be improved in my opinion – it feels so comfortable.I am really pleased to own all of the Zelite Infinity products and I for one will be first in queue if there are any newer product releases.These products come in a very nice gift box so if you have any up and coming parties, birthdays or whatever, gives these guys a thoughtI rate this product an easy 5 stars

There are not words to express how excellent this knife is. I have had the knife for over a year and a half. I wanted to give it at least a year before I wrote a review so I could comment on longevity and durability. The knife has gotten quite a lot of use in these 18 months, so I think I have a representative sample.

When you first open up a Zelite knife, you get the chills and your heart flutters like it's Christmas day. The packaging and presentation are superb. Then you get your first glimpse of that beautiful Damascus blade, with its mirror polish. It is immediately apparent that the build quality and precision are first class. There are no gaps, spaces, rough edges, flaws, or blemishes anywhere to be seen.

And then you pick it up. The handle is very smooth, yet has a tactile quality that lets you know it will not slip out of your hand. The shape is perfect for the chef's-preferred pinch grip, although I found the handle could use an extra millimeter or two in length (although, that could simply be due to my condition, being a 6'5" tall male). The handle is comfortable and allows utmost control.

And then there's the edge. Out of the box, it was razor sharp. In fact, one of my first acts as a new Zelite owner was to inadvertently inflict a minor flesh wound on my left index finger. It bled like stink. That's what years of handling dull knives will do for you. And the blade has stayed extremely sharp for the entirety of the last 18 months. I do about 8 passes of the blade on a ceramic honing rod about every 4-5 uses, and it's still as sharp as the day I opened it. There has never been any hint of dulling (as opposed to micro-burring, which is fixed with the honing rod). The steel is extremely strong and has not sustained any chips or cracks.

As an experiment, I decided to compare the Zelite side-by-side with a decent-but-cheap Calphalon utility knife over the past 18 months. I made sure to sharpen up the Calphalon to so similar level as soon as the Zelite arrived. The contrast between the two knives couldn't be more apparent. I've used the cheapo about half as often and have had to hone it twice as frequently. The edge has numerous chips and is starting to dull beyond what the honing rod can do for it. There is no doubt the Zelite is a far superior product.

What about the price? For your standard home cook, it might seem a little bit pricey. But, you have to think about this knife as an investment. It WILL last longer than any of your other knives if properly cared for (see sob story below). For the build quality, the steel, the design, and edge retention, you would expect to pay double or more for a similar product from a name-brand knife company. The Zelite really is an incredible value.

BONUS SOB STORY: About 2 days after I received my Zelite in the mail, my wife dropped it, tip down, into the sink. Let's just say that was one of the more difficult times in our marriage. Since the tip was so wicked sharp and pointy, it did fold over a little, although not as much as I expected. Luckily I had recently purchased a set of sharpening stones and was learning the art of sharpening. With not much effort, I was able to restore the tip to the blade (for the most part). It saved our marriage!

I have 3 Zelite knives. To be clear, these are not "Japanese knives", they are Chinese knives made with Japanese blades. I also have a Chinese knife made with a German blade, but that's another story (though it's also an excellent knife). I have seen comments about this brand and others sold on Amazon that these are "fake" or "copies of" Japanese knives, which is really in the eye of the beholder. Here's how I see it: The part of the knife that you use and maintain, i.e. the blade and its cutting edge, are Japanese and of a very high level of performance. Goods of Chinese manufacture are often characterized as "cheap" or "mass-produced" and in many (most?) cases that's true. But let's also remember that Asian cultures have been blacksmithing for at least 3,000 years. 2,000-2,500 year-old Chinese swords have been found intact by archaeologists that were still so sharp that they drew blood upon discovery. So the notion that Chinese manufacture of cutlery is arbitrarily a low-grade enterprise is a false premise. I've had my 8" Chef's knife for two years, the other two for about a year. All of them clean, sharpen and hold an edge as well as the $200+ Japanese knives I also have in my block (Shun). For $70, the 6" compares favorably to other knives that cost $150-$400 and that's not an exaggeration. Same with the Chef's - I'd say value is on the order of 30-40¢ to the dollar compared with premium Japanese products that utilize Damascus (layered) forging. I can probably afford to spend more, but I honestly don't feel as if I have to. The thing that I actually like better about the Zelites is their heft: between the solid tang and weighted handle, plus the fuller size and shape of the handle, these knives actually feel better in hand than do Shun. Leverage of this slicer and especially my 8" chef is perfect; I've seen a complaint from one buyer about the knife being handle-heavy so I think that may be a subjective preference. I have small hands for a guy, so I find the feel to be just right (if you're a knife nerd, the balance point is where the handle material meets the bolster, which isn't all that far out of balance for the length of these blades.) I am especially pleased at how well these sharpen with just a few swipes on my ceramic rod - they're easy to keep EXTREMELY sharp if you have skills with sharpening rods or steels. These knives perform remarkably well - I'm not a pro but a an experienced enthusiast - and these blades work well enough for pros and are more than adequate for amateur cooks. In fact, for people who don't have good knife skills, these might be TOO sharp.

This stunningly beautiful knife is very well presented in a flashy box and furnished with a super comfortable
and well shaped handle that always makes it a joy to use.

The six inch blade length is surprisingly long for a utility knife - at first I thought this would make it
awkward to use but the very planted way it sits in the hand with absolute stability offsets this and
renders the Zelite with an agility that is unusually good for this size.

It has an essence of solidity missing from many cheaper knives and does cut very well indeed but
with the blade ground at a steeper angle than I personally prefer.

Fairness dictates that utility knives are, of course, supposed to be good all rounders therefore
I must grudgingly concede that a steeper blade edge grinding angle is probably a technically correct
provision by Zelite for such a tool.

(Steeper blade angles cut for longer and survive tougher Jobs, Shallower blade angles cut smoother but blunt
more easily.)

The Rockwell hardness 61 steel core on this knife is really hard and strikes the sweet spot for good
hardness without being too brittle - I think the factory edge undersells the true capabilites of this steel
but I just know I will be able to re-sharpen it even sharper to my preferred shallower cutting angle when the
time comes. - (Yeah, I admit am a bit of knife sharpening nerd etc)

Somehow, I think I will be waiting a long time. - Excellent knife - I bought the 10" Chefs knife too.

Update July 2017: This working utility knife now been used heavily, still as sharp as bought but I still really
hate that steep long life factory angle so I have decided to risk re-setting it:

It took well over an hour to hand sharpen the edge angle back from 15-20° ? to around 12°: Very, very hard steel indeed.
I used 800 grit then 2000 grit then 10000 grit then a light strop on leather. Wonderfully fine grained steel.
Result = The sharpest blade I have ever had in my kitchen. About as sharp as a cut-throat razor. Be interesting to see how long that edge holds!

It's still early days, which makes it hard to leave a review, as durability is also an important factor. With that in mind I kept one star in reserve in my rating. First impressions have been extremely positive, though. The knife was a Mother's Day present for my wife and in its short span in our household so far it has been described as 'life changing' because of its sharpness and high quality. Thus so far it most certainly comes recommended. The knife looks lovely too. The only nonconsequential negative point is that the presentation box is a bit of an eyesore. Instead of the product name being splattered everywhere we would have preferred something more stylish and classy. However, the box doesn't take anything away from the quality of the product, of course. Give it a try and you won't be disappointed. You may even find that your life has changed...

Some of these reviews are a tad misleading in my view. It is a sharp knife but I can buy a £20 knife that is just as sharp. The thing about this knife is that it's supposed to remain sharp without the need to sharpen and we won't know that until we've had it for a year or two. Clearly, some of the people giving five stars have never bought a new kitchen kife before. It does struggle with some things too, for example, it struggles sometimes to cut right through the skin of an Advocado; I have to put pressure on it and rock the blade to get all the way through.

Some of the claims made in the marketing too are confusing because I have a sharp steel kitchen knife that I bought in 1997/98 and it's still a sharp knife although I've never shapened it. So to tell me that stainless steel isn't sharp is misleading. I don't know, I can't decide whether this is a bit of a scam. So is anyone who has submitted a review willing to claim that this knife is sharper than any other new kitchen knife because let's be clear, it's not! It's a nice looking knife, it would make a great gift for someone but at the end of the day, it's as sharp as any other sharp kitchen knife and only time will tell if it remains sharp.

In light of this, I'm a bit concerned that so many people have given it five stars, and a RRP of £187 is laughable.
