it's very nice to have sheets as opposed to rolls - for more than one reason - main reason being;
rolled parchment is aggravating due to the curling - and yes i know one can 'roll' it the other way, or crease it to quit the curling - i just don't have time for all that.
the sheets are better - these sheets have done very well - as well as the very expensive rolls.
and besides all that - depending on what i need it for, i use more than one sheet, and i can 'stagger' them in the pan to accommodate different foods on each side of the pan.
bottom-line; sheets are better than rolls, and these have done very well for me.
i've used them up to 400f-420f and they've never discolored or become "crispy" as have some of the rolled parchment.
at any rate - i only use unbleached parchment, because these days there are enough chemicals already in ALL foods, even what's labeled; "organic" - so anything one can do to reduce even a tiny bit of chemicals is better than nothing.

I find this "Katbite 120Pcs 8x12 inches Parchment Paper Sheets, Heavy Duty Unbleached" exactly what I wanted. I had bought something like this in the past & knew the pre-cut sheets were definitely worth the cost and were so handy to use. I saw in some reviews that some people were upset that the parchment sheets were in a box rather than in a large envelope. I find this is very handy to attach to the inside of one of my cupboard doors. I just use a few small pieces of double side tape which I also bought on Amazon "Heavy Duty Double Sided Mounting Tape, Traceless and Removable Nano Adhesive Tape for Outdoor and Indoor". It is handy to use, close to where I'm cooking. (I did also attach a larger tab to help close the box.) Overall, the parchment papers could be a little shorter to fit my cookie sheet, but I just fold it under a 1/2" which is simple to do. The papers make the cleanup "easy, peasy"! I highly recommend them!
