I was very excited to receive the ISI whipper but it leaked gas (and therefore cream) from the first use. My adult daughters and I watched the online instruction videos and did exactly what they said. Cream just bubbled out and wouldn't stop no matter what was done. The seller advised me to contact iSi and they would send a replacement. ISI sent a replacement top but the replacement top did not fix the problem. We figured two lids wouldn't fail - we must be doing something wrong. After burning through almost an entire pack of gas canisters while watching instructional videos and reading online use information and still having the problem, I took video of the cream leaking out and sent it to iSi asking what we were doing wrong that was creating the problem. Their representative told me we were not doing anything wrong and that it should not be leaking as it was. She sent me a whole new unit. Same problem. I told her I wanted to return everything and receive a refund. She told me they could not issue a refund as ICO Trading is not an authorized dealer in the US. I wrote to ICO Trading via Amazon asking for a refund saying I knew it was past the return date but that I'd been following their instructions and trying to sort out the problem with the manufacturer. I offered to send the emails with iSi which showed the ongoing communication. No response from ICO Trading.
Many people have tremendous success with this product. I suggest you buy from an authorized dealer not ICO Trading just in case you have problems like we did.

A word of advice on the nitrous chargers: buy the biggest pack you can afford. It brings the price per charge down in the long run.
They're not difficult to use. But they require attention to detail, and if you're going to deviate from tested recipes, you should understand the underlying principles, and be prepared for a few failed experiments.
Chefs are using these things to death in top kitchens all over the world. You don't have think twice about the quality for use at home.
It's comforting that Isi provides more than the usual amount of support, including a 2-year warranty, and worldwide distribution of spare parts.
My one complaint is that you can't buy the bottles individually. I'd love to buy a single siphon head, and have both a half-liter and 1-liter bottle. As far as I can tell this isn't possible. If you want two sizes you have to shell out for two complete siphons.
Of the various accessories, the one I'd most recommend is the funnel and strainer combo. It's really the perfect size for the Isi, and makes using the thing much easier. Using my regular funnels would make a lot of the routine tasks feel like a chore.
The infusion kit probably only makes sense if you're a bartender, or if infusions are your primary use. It's pretty easy to accomplish this task without the kit; it's just a bit messier. Skip the injector nozzles unless you're sure you need them.
Definitely get the Gourmet Whip rather than the Thermowhip unless you're a caterer and specifically need the insulated bottle. That model is much less versatile, as far as being able to chill mixtures or reheat them in the container. You'll find that many recipes and common procedures require chilling or heating after loading the Isi.
You should expect to waste around five cream charges before you understand how it works. Once you get the hang of using the machine it works very well. With NO2 you only fill to the 0.5 liter mark. (And for a good result you need to fill to the 0.5 liter mark. So stay away from the 1 liter model unless you want to make large quantities all the time.)
The manual does not mention soda/CO2, but you can just plug in a CO2 charge instead (third party charges fit too). You need to fill the container to the top, make sure the water is ice cold, or at least store the unit in the fridge for a couple of hours. Also don't use the nozzle for carbonated water. Instead unscrew the top of the container, after you have let surplus gas out through the nozzle. You can also carbonate other things. (I've tried carbonated fruit and it actually isn't very good.)
The build of the item is very good and the brushed steel looks nice and heavy. The rubber details feel very durable.
