First off, these are affordable. Non stick, good size and dishwasher safe. They have held up nicely over repeated uses and washings. I only use rub er spatulas when removing food from these pans. Also, I have read that lemon washing liquid can wear down things quicker because the lemon is an acid. So I do not use any kind of lemon
