I have been cooking for 40 years, 10 of them plant based and many veg cookbooks are the same old thing...grain bowls and bean burgers. I bought this book because 1. Jamie brings a lifetime of professional culinary experience to the table and 2. He is well versed in international cuisine. And in my opinion it delivers! But, if you like to follow a recipe to the T then this might not be for you. If you are an adventurous and seasoned cook then you will be able to make substitutions with confidence and Google unfamiliar terms and reap the benefits of his creative and interesting take on vegetables.
