I've never eaten this but I can tell everyone that this is NOT a safe, low starch substitute for regular pasta simply because the first ingredient is "Semolina Flour" which is a high sugar flour that raises blood sugars from the mouth as soon as the saliva in our mouth with the amylase enzyme in the semolina flour and sweet corn flours, hits the semolina flour, the sweet corn flour (ingredient #2) and collides with the amylase enzyme. This is NOT a low carb substitute because the 2nd ingredient, sweet corn flour, is also a high starch ingredient. The only low carb, low blood sugar raising ingredient is the dried carrot flour. But since it is outnumbered by the starch in the first two ingredients, this is not significantly lower in blood sugar raising potential.
