In the spirit of full disclosure, like I did with Eisner’s first IP cookbook, I will state that I’m a huge fan of his recipes, techniques, and presentation. This book contains lighter fare but doesn’t skimp on nutrition or taste. Jeff is an internet cooking personality and can be seen on GMA and Rachel Ray. That said, let’s get to the cookbook.
This book takes all the fear out of cooking with an Instant Pot. It starts briefly, in Eisner’s friendly manner with an introduction to the IP, then has the color keys explained (Keto, Paleo, Dairy-Free, etc.) so you’ll be able to choose the recipes that most fit your lifestyle. The recipe sections are more or less standard but the choices and results are above and beyond:
Soups & Stews – try the Turkey Taco Soup
Pasta – Chicken & Peppers
Rice & Grains – I love the Chicken Congee. It’s thick and satisfying
Poultry – I’ve had the Carolina Pulled Chicken Slaw & recommend
Meat - wow – there’s healthy Crispy Carnitas made with the Fryer Lid
Seafood – try the Bouillabaisse – it alone is worth the price of the book
Veg & Sides – how about some Elote? Mexican Street Corn
Desserts – Yes to the Baked Apples
There are nearly 100 recipes and he’s included a dozen that use the new Air Fryer lid if you have one. The biggy that separates Jeff’s cookbooks from the many others on the shelves is that on each and every page he has a series of photos that will walk you through the process. Grandma is giving Jeff an A+ with an extra star for effort. ******
