sweet thing and drinks

Don't buy this more expensive and older publication. Buy less expensive "Easy Tagine" by same author which has exact same recipes as this version and more recipes on skewers, roasts, pan fries, soups and small bites, sweet thing and drinks. I did side by side comparison. Easy Tagine has more recipes and even has same pictures.

No mention of how to prepare...or even IF you need to prepare a tagine for first use. Yet a heat diffuser is recommended which makes me think the author did consider it would be a newbie using the book. The recipes do NOT tell you what size tagine the recipe is designed for. Since I bought the smaller one before I committed big bucks, I was uncertain...will this spill over? do I cut the recipe in half? How much stuff do I really need of these exotic ingredients... Beautiful pictures, the recipes seem fine, but big holes if you thought this was going to be an instruction type book.

I received a tagine for Christmas and decided to buy Tagines & Couscous by Ghillie Basan as my first Moroccan cookbook. I was so impressed with the photography and the quality of the recipes that I decided to make a video review showing not only the book but also several of the dishes that I made using this excellent, authentic cookbook. I LOVE this cookbook!!! I am a fairly inexperienced cook, but I recently decided to invest in a tagine and this recipe book and I am so glad I did! So far I've tried 4 recipes and each one has been delicious. And unlike a lot of other recipe books that end up disappointing because only a few recipes sound exciting, this one has tons of appealing-sounding dishes so I'm sure it will take me months before I've tried all the ones I'm curious about. The only thing I would critique about this book is that the directions are somewhat vague - you never know how high to put your flame, and the ingredient quantities can be vague too. But even with those flaws, everything has come out great so far, so clearly it's not a major problem. Another thing I like is that these recipes are not very high in fat - just a tablespoon of oil for 4 servings is usually enough fat to make things taste good. I'm on Weight Watchers and haven't had to modify these recipes much to make them work for my diet (I just use a little less oil/butter). Highly recommend!

I have tried at least six recipes in this book and each one is different and absolutely delicious. If you do not own a tangine, purchase one through Amazon and then buy this book. You are in for a treat! I recently visited Morocco and even took a cooking class. Treat yourself and others to a different world. The spices are out of this world! I am now cooking chicken with apricots and rosemary (served with couscous). There are so many flavors and spices besides rosemary: too many to mention.

Can anyone say something bad about Moroccan food?

I LOVE this book! I am something of a cookbook, kitchen gadget, and general cooking geek. I recently had authentic Moroccan food and had to try to make it at home. This book did not disappoint. It's a short book, not a bible, with great recipes.

The only issue that I have with the book is several of the spices referenced aren't easily found in grocery stores but you can find them here.

I have only made a few dishes from here and I have loved them all.
I would buy this book again or give it as a gift.

The first time I looked through this book, I didn't think I'd get much use from it--sort of an "Oh, well" reaction. But as I have looked through it several more times, I've realized what a good book it is. First, the photography is beautiful--rich color and intricate detail.

Second, Basan opens the book with the basics of making some basics: the aged butter called smen (I'm passing on that one); preserved lemons (I've put up my first batch); chermoula (a marinade I'd like to try on fish); harissa paste (a super hot spice mixture I'll avoid); and ras-el-hanout (a very commonly used spice mixture which I'll have to try making on my own unless someone sells it commercially without black pepper).

I also like the way the book is divided into sections: lamb tagines (a "tagine" is a food mixture as well as the dish in which this food mixture is cooked), beef & sausage tagines, poultry tagines, seafood tagines, vegetable tagines, couscous dishes, and other side dishes.

I've made one lamb tagine and one vegetable tagine, both with good results, and I've marked 13 other recipes I'd like to try.

There is a learning curve with these recipes, but don't let the difference intimidate you (I'll admit to being a little scared at first). However, the difference is the fun of trying these new tastes.

And you don't need a tagine dish, though I wish I had one--you can use a wide covered frying pan or a heavy iron pot with a lid (like a Le Creuset or Lodge French/Dutch oven).

The website offers two cookbooks frequently bought together. Be warned, They have the same recipes, even the same photos. Just buy the "Tagines & Couscous..." as it is the newer version and has additional recipes and information. The "Tagine: Spicy Stews from Morocco" was published several years earlier. But either one, the recipes are great!

I had hoped for more honesty in the recipes...and less hype for the intense highly spiced foods, although, it appears that Moroccan cooking is overly hot...maybe to cover the meats and vegetables used that might not be fresh or safely used. We shall see what I can adapt to our tastes and palates. Several photos of the market places and souks look terribly dirty and unclean, according to Western standards!!

First let me say that I have loved every recipe that I have tried. It took me almost a year after purchasing the books and tagine to get the nerve up to actually try them. But fear not: the tagine is much easier than I had thought and I was coking delicious meals right from the start. I was also able to order all of the hard-to-find ingredients from Amazon.

Unfortunately, like another reviewer, I ordered two of Mr Basan's cookbooks, only to find that they contained the same recipes. In hindsight, I would have bought the 2007 book only. It is less than half the price of this one.
