Best brownie pan. Period.

Love this pan. I received this pan today. I have been working on crafting the perfect brownie for a week or so and knew I wanted a pan that would yield the perfect individual portion and have every one be a corner piece. Soft and gooey center and crispy corners are the benchmarks we are all looking for. This pan delivers perfectly. I ordered another one today. It is stiff and rigid and will not warp. I use a spray for release. I am pretty sure you need to do this. No baking pans are truly nonstick in my experience. I have been cooking seriously for 50 years but baking is fairly new to me.

I saw reviews complaining the portions are too small. Nonsense. It is the perfect size for a brownie. You want it to be tall instead of flat and wide. This is the only way to get the cake-like center , shiny top and crispy corners. I used Guittard Rouge cocoa and Ghiradelli 60% cacao feves.

I will be doing other things in this pan and will post pics as I progress. Highly recommended.

Disappointed. Brownies stick to pan.

I am a pastry chef. I bought one of these pans to test them out before I bought more. The pan does cook evenly with nice edges BUT the brownies STUCK to the bottom each time I tested the pan out (3x.) Even when I greased the pan it still stuck. If you don't mind having the bottom of your baked goods stuck to the pan then this pan is for you. I however am still on the hunt for a non stick brownie pan.

Made my son a minecraft sword cake using this pan and it came out great! I used regular round cupcake liners and filled the batter halfway. All the cakes came out nice and fluffy. I had no issues.

I am glad I read ALL the reviews for this pan! I AGREE that a good cooking plan for brownies is the temperature stated on the box for about 25 minutes. I use a scoop to fill the wells. I try to make a dozen not-so-high brownies because the mix does fill 12 wells to make a good portion brownie for one person. My first batch I sprayed with baking spray and dusted with cocoa powder (because so many reviews said the brownies stuck to the pan). I will NEVER dust with cocoa powder again! WHAT A MESS! It was so hard to wash the pan! And I ended up throwing away a brand new sponge because there was no cleaning it. The next batch I just sprayed cooking oil on the pan. It was so much EASIER to wash afterwards. But, the square wells and the seam around the top of the wells does require more attention to get clean (I handwash). The first batch of brownies did not just slide out. I didn't even try to shake them out upside down on the second batch. I just used a plastic offset spatula that I bought here on Amazon. I paid careful attention to the size of the spatula to make sure that it wasn't too wide to fit in the well or too narrow to get under the brownie and get it out whole. It's black plastic and made by Pampered Chef. Expensive for what it is but I was doing one-stop Prime shopping to get everything before a deadline.

I did not buy this pan with the intention of using it for brownies! My nephew wanted a Minecraft cake for his birthday and I could not get round cupcakes set up to look nice.

Enter this pan...

This was perfect to make the little creepers and sword from the game.

It is the perfect serving size, equal to that of a cupcake. I can't wait to use this on more of my cake orders!

I love this pan very much, and not just for brownies. In fact, it's the second one I am buying to join the one I've had for a few years. One of my favourite things to make in it is stuffing squares for Thanksgiving -- it provides a perfect portion, and a perfect ratio of crunchy exterior to soft and moist interior. We love stuffing around here, so I always make at least 2 pans' worth. Other than that, I've used it for mini cornbread (with different toppings), various mini cakes, mini frittatas, and so on. I always spray it, and wait for whatever I am baking to cool a bit to remove it -- seems to work like a charm. It's also a very high-quality, sturdy pan. I've been using the first pan for about 4-5 years, and it's still as good as new (I always wash by hand and immediately dry with paper towels). If you like mini foods, you'll find plenty of uses for it!

Brownie Bar Pan and Premium pan very similar, neither completely nonstick

I have now tried two of the Wilton brownie pans. There are three that get listed, and the prices keep fluctuating up and down, so it’s hard for me to explain which is which, but the Brownie Bar Pan and the Perfect Results Premium Non-Stick Bakeware are the two that I’ve tried. The one that’s priced higher and listed as “nonstick” may actually be the same pan as the cheapest one, but I did not buy it, and I am not sure. At the time that I bought them, the Brownie Bar pan was about a dollar cheaper than the Premium pan, but at this time, I think it’s actually a little higher. In truth, I think that both pans are very similar. The Brownie Bar pan does not list “nonstick” in its title, but does list nonstick in its Amazon description. In performance, I added a little oil to each brownie well before filling them, and in neither case did the brownies come popping out undisturbed, but the Premium one required less vigorous coaxing with the thin, offset spatula. Interestingly, the brownies tend not to shrink within the well which I suspect is part of the reason they don’t slide out so easily. In the end, the Premium Pan was about a dollar more, but is marginally smaller around the edges than the other one so fit better in my toaster oven, and *might* be slightly better in the nonstick performance, so it was the one that I chose to keep.

Great pan--so easy to remove cupcakes and clean; used for Minecraft cake

I used this for cupcakes (rather than brownies) to make a Minecraft birthday cake. It worked great. I had read that you could use regular cupcake liners and still get square cupcakes--that isn't 100% accurate. The tops were square but the bottoms were still round, so if you want cube-shaped cupcakes, you can't use round liners. I just sprayed the pan and didn't use any liners, and the cupcakes came out perfectly cleanly and the pan was super easy to clean afterwards. Keep in mind that if you do want cube-shaped cupcakes, these are not as deep as they are wide, so they aren't perfect cubes (you can see that in the photo). Also, the cake batter puffed up so the tops were rounded, but it was easy and quick to slice of the bulbous tops. My son the Minecrafter loved his cake and helped pick out which LEGO pieces to decorate it with.
