Since going gluten free over 3.5 years ago, I have struggled with finding a flour mix to bake with that didn't leave an after taste in the baked goods or had poor consistency. I read an article online that mentioned Cup4Cup and decided to try it, even though it is quite pricey. I was not disappointed. This flour mixture virtually ensures you can bake or cook gluten free and have it taste like the "real" thing. Before going gluten free, I was known as the Queen of Gravies and I remember the first time I made gravy with a gluten free flour mix and I cried as the gravy was a horrible gelatinous mass that was simply not edible. Cup4cup changed that as well - I now have re-emerged as the Queen of Gravies and Sauces and no one can tell the difference. Sauces and gravies come out smooth and have no flunky taste and they hold over well as leftovers too. With this flour mix, you can follow any recipe you see in a book or online and you do not need to add extra ingredients such as xanthan gum. You can cook, bake and follow recipes the same as anyone else and not feel like you are being left out of things being gluten free. I know the price is expensive and it has not come down in the 2.5 years since I started using it, but it really is worth it for the quality and versatility. The only downside is that the company does not recommend using it for yeast bread baking. I would agree. I have tried it with yeast bread recipes in my never ending pursuit to find a decent bread like the breads I used to enjoy, and although it doesn't ruin a recipe, it will not make your yeast breads turn out any better as if you were using wheat flour.
