I've never used a tagine but love Moroccan food. So, after a little bit of research, decided to buy the Emile Henry one.
I cooked a very basic lamb and mint stew and it was fantastic!
The Emile Henry tagine does not have a vent, steam cannot really escape from it and so recirculates. This means that you don't have to use as much liquid as a recipe would ask for. Know knowing this, the next time I cook something I will add probably half as much water as directed.
As I stated at the beginning of this review, I've never used a tagine before so getting to heat up was trial and error. The placed a Nordic Ware heat diffuser on the electric stove and started to heat the tagine up on a low heat for about 10 minutes (make sure you have liquid such as oil or water in the base of the tagine otherwise you may end up cracking it).
Then I turned up the heat slowly until it was hot enough to add the onions and spices.
I'll definitely be using this in the future!
Oh, as for how the food turned out: the lamb held its shape whilst being extremely soft, the tomatoes were not mush, and the courgettes still have a little bite to them! :)
