This is very good quinoa. I am not a recent curiosity seeker about this wonderful, nutritious grain. It is a staple in our diets. We have eaten low on the food chain and mostly unprocessed for 45 or so years and have enjoyed the attendant health benefits as well as the culinary delights. When I first used quinoa, I found it too bitter until I learned it had to be carefully and thoroughly rinsed to remove the natural predator protection with which nature provided it. Then the producers got smart and washed it before they sent it to market, so this quinoa doesn't have that problem, nor do most on the market today. I still rinse all my whole grains briefly in a mesh strainer before using (except those I grind for bread for obvious reasons) because I am a fanatic about kitchen cleanliness. This multi-colored quinoa is not only beautiful to serve, but tasty hot and cold. I cook up a pot and use it warm one day with a hot veggie dish, and cold another tossed in a salad with beans and fresh vegetables. Sometimes, I heat up a little for lunch and drizzle it with really good olive oil and a sprinkle of freshly ground Himalayan salt. This brand seems be more tender and less abrasive than some I have used. It also has a sweet, delicious taste.
