Just recently bought this Dutch processed cocoa after seeing it on America's Test Kitchen taste test. It was excellent. I used first off to make brownies and they were so rich and decadent! Then I used to make a double chocolate chip cookie recipe and they were moist and chewy in texture and remained that way from the first to the last that was eaten several days later. Then lastly I made the best chocolate cake with a chocolate buttercream frosting. My husband said the cake was as if baked by a professional! It was really awesome! I think everything tasted so rich and chocolaty because as I understand, Dutch process cocoa has more fat than natural cocoa(Hersheys, Nestle). When I would use natural cocoa, the cakes would be drier and the frosting would be lighter in color. Droste cocoa is the finest cocoa I have ever used in my life. If you want to "wow" folks with your sweet treats this is the cocoa to use! Highly recommend!
