These noodles taste great; perfect for tonkotsu ramen. First time, I boiled the noodles separately from the soup broth. Second time, I thought I would get a little thicker broth by cooking the noodles and the broth in the same pot. Huge mistake! I didn't understand why the whole ramen tasted so salty. When I checked the nutritional label for the noodles, I found just one bundle (one serving) had 1.57mg of sodium -- 68% of daily value! You must discard the water after boiling the noodles, unless you want to OD on sodium for some reason. I can't believe just the noodles alone can have so much sodium content. Next time, I'm not making this mistake again.
