I used this to make home fermented mustard along with equal parts yellow and brown varieties. (There are 3 different plant varieties, though I’ve found some places sell the brown variety as the black thinking, I presume that they are the same thing ). The resulting mustard was the best I’ve ever had with enough of the wasabi-like nose pinch to brighten it up without keeping you from wanting to use lots of it. I put it in the 17 oz size FARI glass storage jars which were perfect for it. I find the wire bail and seal ring to be self burping and now use that style for all my dill pickles and sauerkraut. Next time I may try making the mustard with just the black and brown varieties and leave out the milder yellow.
