I've experimented with this filter versus the paper filters for about six months, and I'm convinced that the coffee tastes 9x better with the paper filters. I do not understand why. The paper filters smell weird and you have to wet them first (I do with boiling water), and then I have to empty that water out and rinse the Chemex because the paper filters smell weird. YET the coffee comes out great. You get to skip this step with this steel filter but the coffee comes out horrible. Tastes like burnt coffee from a greasy spoon diner. Now, I've made a few batches that taste good, but overall I'm terribly disappointed. I clean it really well each time, and use vinegar to get rid of any soap scum/residue, so there should not be any soap issues there. I'm no scientist, so I have no idea why this is, but I'm convinced because I've been doing this for six months before finally posting this review and deciding to never use it again. Wasted my money unfortunately. Maybe others don't have this issue. Or, more likely, they just can't taste the difference (my wife can't after putting crappy creamer in), but if you're using a Chemex you are probably a supertaster and you'll tell, as I do.
