I've been using Red Star Premier Classique for years (formerly Montrachet), as well as many other bands of wine yeast. I've had foam and overflow issues before, but nothing like this year's run of wines with Premier Classique. I should have purchased other varieties, such as K1 for this year's wine season. The foaming, and resulting mess, was extreme. I have to keep my primary fermentation bucket and secondary carboy at 3/4 full max to avoid overflow. I've been making wine for many years, usually about 70 - 100 gallons per year. I've never seen so much foaming like this. I'll have to keep the wine in the primary much longer than usual to so I can get more in the carboy. This is definitely the last year I use this yeast. K1-V1116 is a much more consistent and reliable yeast.
