Makes Great Pizz'r!

I make pizza every Sunday and my 18 year old son is gluten intolerant. I worked for a year getting the technique down using KA gluten free "All Purpose" boxes of flour. That worked good but was really expensive. These bags work as good but are like half the price. For those interested, my recipe and technique are as follows.
250g KAGF Measure for Measure flour
70% Water - 175g
.025% Salt - 6.25g
1tsp sugar
1tsp yeast
1Tbs olive oil

Mix all ingredients in a bowl. Using an oiled hand works best. Pack down in 14" round pan. Cover with cellophane directly on flour. Let sit a good 2 hours room temp to rise. Preheat oven to 425 degrees. Put your ingredients on the pizz'r. Put in the oven mid rack for 12-15 minutes. Take out, remove from pan and put on a cooling rack at least 20 minutes. Now take and put back in the oven, preferably on a pizza stone for 7-10 minutes at the same temp. This last part makes it crispy AF!! Enjoy! Dr. Matt

I have had gluten problems for years but never with this flour. You can substitute this flour for any whole wheat flour and it performs identical to regular flour. Highly recommend!

My wife and kids are sensitive to gluten, so our cooking stays almost entirely gluten-free. This is one of our two favorite gluten free flours. The first time we used it we were surprised at how much more "bread-like" many of our gluten free recipes came out. Like most gluten-free flours, it's not a perfect replacement/substitute for all recipes (and they directly say as much), but for many recipes this is our go-to flour and has made gluten-free baking a greater joy. I highly recommend.

We bake 100% gluten free and this flour works tremendously well (of course yeast breads are hard to make gluten free). We have used this flour however to make pizza crusts which worked pretty well. Also breaded Salisbury steaks and thickened the gravy with this flour. Love it
