If you are interested in going vegetarian, or just want to add more meatless meals to your diet, this book is for you. It explains in great detail everything you might want to know about both tofu and miso, including how to make the various product yourself from scratch. This is especially helpful if you live in an area where these products are not comercially available. Many, many recipes are also included. The only thing that could make this book better would be pictures of the dishes, but, as this is a HUGE book to start with, I don't know how they could fit them in.
