Dear gypsy "gypsy", I made coconut poppy seed cake yesterday and was disappointed.
1. It raised nicely while in the oven, but then it fall. The recipe asks for 1 cup of flour for 3 eggs+1/2 cup oil +1 cup yogurt. I compared it with few recipes and found that usually we need at least 2 cups of flour for this amount of liquids. I am going to try the cake with 2 cups flour.
2. I felt that the cake was too "oily". I have a similar cake recipe (no poppy seeds thought) and I use there 1/4 cup of oil and 1/4 cup of orange juice instead of 1/2 cup of oil.
3. Lastly, it is too sweet from my point of view. It asks for sweetened coconut and 1 cup of sugar. I used unsweetened coconut plus 1 cup of sugar and even in this case it was too sweet.
