I eagerly awaited this cookbook to come out as I love Lindsay's first cookbook, "The Happy Herbivore." I knew I was getting it as a Christmas gift and couldn't wait to browse through it. So far, it has lived up to my anticipation and expectations! This book is just as beautiful as the first one, well designed, sturdy, and filled with photos that make my mouth water. I've only had the book for one month but already some of my favorites are: all the smoothies are delicious, Mexican Frittata, Single Blueberry Muffin, Eggless Salad, Pinto Burgers, Chickpea Marinara, Chickpea Tikka Masala, Creamy Dijon Pasta, and the Apple Fritter Cups. There are SO many more recipes that look absolutely delicious and I cannot wait to try. My New Year's Resolution is to maintain my significant weight loss and lose a few more to reach my goal. I know that this book will help me to do that and I plan to rely on it heavily. Highly, HIGHLY recommend!
