Good Revision of a Classic Product
on March 27, 2013
A number of years ago, I created a dessert called "Brownie Tuesdays", which involve brownies topped with pudding and a homemade sauce, often vanilla or butterscotch, topped with whipped cream. I was distraught when Amazon discontinued the regular brownie mix, but decided to try these. My sons agreed to try this new formulation made with a number of different recipes (based upon earlier Betty Crocker product instructions)- a batch each day for a week. I'm sure you can all imagine what a sacrifice this was for them - eating brownies every day ;-)
The nomenclature "low fat" appears to refer to the fact that this mix uses only one egg instead of 2, and has reduced by about 85% the amount of oil used. The recipe on the box makes very sticky, fudgy brownies. Using the recipe from the previous mix (2 eggs, 1/2 cup oil, 1/4 cup water) makes a cake-like recipe. Using the recipe I remember from 30+ years ago (1 egg, 1/4 cup water, 1/4 cup oil) makes a fudgy, but less sticky, brownie.
Also, it's worth noting that I was given a stoneware pan a couple of years back, and I use it to make my brownies now. They cook much more evenly.
