Well written, super easy bread recipes that are fail proof. The book teaches you about flours, yeasts, enhancers, and other ingredients and tools to make the amazingly easy and tasty bread recipes. It takes longer to measure out your ingredients than it does to mix the dough with a spoon by hand. You don't have to have an expensive space hungry mixer to make the breads in this book. Nor do you need to be a beefcake to knead the dough. Even the recipe or two that mention kneading, only says you knead for a little bit to "excite the gluten" lol! I've been making sourdough for several years using techniques I've found in other books and youtube videos. They make good bread. This book has given me some simple breakthrough techniques to great bread. My very first loaf using this book got rave reviews from my family. They said, "What did you do, this is your best yet." I had to read through this book twice but once I figured out that you have to make the Master Flour Mixture and THEN make the Master Bread Recipe WITH the Master Flour Mixture I was fine. I also ended up buying several new kitchen appliances (a stand mixer, a kitchen scale, large storage tubs, food thermometer, oven thermometer, & cast iron dutch oven, among other things) as well as a bunch of new ingredients (including rice flour, potato starch, tapioca flour, bulk yeast, etc.), so there was an initial investment in supplies and equipment. Making the dough takes much longer than 5 minutes, but once you have the dough made you can store it in your refrigerator and it will make four one-pound loaves over the course of several days. I've had this book for two weeks now. I have made the rejuvelac, the yogurt, and 12 of the cheeses. The rejuvelac recipe is easy and worked well. The yogurt has yet to work for me after 2 tries and much wasted almond milk. Therefore, the yogurt cheese also failed. The fresh mozzarella doesn't seem to work for anyone, I've tried it twice, both times following the recipe exactly. It just doesn't get solid. May be a flaw with the directions in how to add the agar.
The gruyere is delicious. The sharp cheddar is acceptable. The meltable cheddar and air-dried cheddar still wont work for me, they turned into sauce instead of solid cheese. The meltable mozzarella works very well but taste isn't 100%. Meltable monterey is wonderful. Smoked provolone is SUPER EASY and AMAZING. I love this book. So far I've tried 4 of the recipes in the book and they all turned out very well for a first attempt (knowing that I wasn't perfect in my execution). The recipes are simple and easy for the novice, but have enough nuances that I know it will take me a while to master. I chose this iteration of his recipe books because it contained all of the recipes I wanted - french breads, bagels, pretzels, and rolls.
My complaint is the format of the book.
1.) The table of contents doesn't include the recipes. Seriously? If I want to know the location of the recipes I need to go to the glossary. The only way to know all the book contains is to flip through it. This is my biggest complaint.

Yes, there are tons of no knead videos & websites out there on this subject, but for a confused beginner, I think this book will help you get off to a wonderful solid beginning so you can confidently branch off to making some of your own creations. Lots of tips & information that will help you understand what you are doing & why you are doing it. His basic recipe is for a smaller batch of dough, which is ideal for one or two people.
He talks about a particular recipe & then refers to a youtube video that will show you the actual process of making that particular type of bread. Also, his method does not call for using a mixer to mix the dough, which is a big plus.

This book can be a little overwhelming at first. There is a lot of information contained in the book. I recommend you take it a little at a time and don't let the thickness of the book scare you, a good part of the book is recipes for specific cheese types. You can clearly feel the author's passion for and knowledge of making cheese and this helps get through the technical information. Even if you don't ever make the cheese described in the book it will change the way you shop for cheese.(132) -

I have bought many, many books regarding cake decorating. Some are good, some are great, but I must say this book by Elizabeth Marek, is by far the BEST book ever. It has simple, right to the point, easy to follow instructions and tutorials. The photos are amazing and a lot. Great book! Easy step by step instructions in the front of the book. I let the pan set overnight and cut them the next day. Easy to do. I ordered cello wrappers from caramelwrappers.com and they were perfect. I got the 5x5 squares. Affordable and quick shipping. I made the vanilla salted caramels so far....DELICIOUS. Everyone loves them. The only thing I did not like about the book are the recipes that add cookie/pie/etc texture to the caramels. I decorate cookies and just want to do flavored caramels. I gave it 5 stars anyway because I will still use the recipe provided and just skip the "crusts." Worth the purchase!(65) -

I can remember homemade ice cream as a kid: it was an event. An EVENT. It meant breaking out that big bucket with the blister inducing crank. You needed serious muscle to get that going - and to get an actual edible serving of ice cream. As you can imagine it wasn't something we did very often.
