This cookbook is a must have for families who have busy lives but don't want to always fire up the stovetop or oven. Our family loves this cookbook and we use our Instant Pot at least 2x a week. We seek out weeknight dishes that remind us of our younger NYC years and eating out but with Urvashi's recipes, we can enjoy bring cuisine at home without hassle and cost of going out. Crowd pleasers are definitely Butter Chicken, Chicken Korma, Lamb Dum Biryani, Shrimp with Coconut Milk and of course, Vindaloo. I never cooked Indian before but now feel like I have the right recipes and well tested technique with a range of flavors. It's just that easy. Of all the Indian cookbooks I've bought, this is one of my favorites and the one I use most of the time. I love the recipes and most of my "go to" recipes are found it it. Shubhra Ramineni has a very intelligent and consistent methodology and makes cooking Indian food more enjoyable. Beginners will find it a stress-free way to get their feet wet, and for those who have been cooking Indian for a while will find much to appreciate here.

The first recipe we made was Cilantro Chutney Chicken. Once the chutney was made, we decided all that was necessary to make it a perfect meal, was a straw. Unbelievable flavor. I'm surprised we had enough left to put on the chicken.

This is a fantastic cookbook. I was a bit hesitant to purchase the book, so I went over to the authors blog and found a couple of Indian food recipes for the instant pot over there that looked good. Both recipes were quick and easy to make and both came out absolutely delicious, at least as good as what I get at my local Indian restaurant. This is a great outcome, especially considering I'm new to instant pot cooking and new to cooking Indian food at home. Both recipes made quite a lot of food, I was able to freeze the leftovers and they re-heated beautifully (no more grocery store frozen Indian food dinners for me, this is so much better, tastier, and cheaper).

The language is warm and straightforward with good explanations and the depth of flavor, combination of spices is superb and i highly recommend this book to anyone who wants to learn the basics of Indian cooking from beginners to home cooking experts who want actual recipes and this book has so much good Indian "home cooking" and it even has recipes to make your own spices (garam masala, chana masala, etc) and make your own chain and it has side dishes and main dishes and plenty of very helpful tips in each recipe and the narration throughout this book is superb, its like you have a guide with you while you are cooking and my all-time favorite is Bhindi Masala, the famous okra dish and i make it about once a week now and the recipes are very clearly written and are relatively easy and once you have the spices ... full review
